Imitation Meatloaf

This is a fabulous recipe for our vegetarian household! Cook the lentils and rice with more water than usual to make the loaf not so dry. I also mix a little cheese into the loaf and then sprinkle some more on the top. This is truly the best vege-loaf I've ever had!

Connie's Zucchini "Crab" Cakes

These "crab cakes" were very good. They were pretty messy to fry up, but the taste was wonderful. Even my 5 and 8 yos. thought they rocked!

Creamy Yogurt Hummus

This hummus was runny and bland. I like the idea of using yoghurt in a hummus recipe to give it an extra tang, but I wouldn't use this one again. It just wasn't worth "tweaking" to try to get it right.

Tomato Pesto Batter Bread

This bread was quick, easy, and wonderful. I used about 1/2 & 1/2 w.w. flour and white flour to make it a little more hearty. I also baked it as a round loaf on a flat cooking sheet to give it a crispier crust. YUM!

Roasted and Curried Butternut Squash Soup

This is an excellent soup! It's quite sweet (in fact, I'll use a little less brown sugar next time) and has a very rich aroma. Make sure that it is pureed very well--a blender might work better than a food processor. Also, make sure that the soup cools a bit at the end or the yogurt will curdle. Even my 8 year old son loved this soup!

I made my own tomato sauce instead of canned stuff. Just make sure that you have plenty of sauce. Very good recipe!

Blueberry Cornmeal Muffins

I didn't really care for this recipe. The cornmeal seemed to make them heavy and even though I cooked them quite a bit longer than called for, they were still soggy. My 8 yo didn't like the texture that the cornmeal gave either.

My whole family adored this soup! It was truly fabulous. Tangy, just the tiniest bit sweet, and lots of flavors/textures. I added almost double the pasta, though. Next time, I'm going to try it in my crockpot to give the flavors plenty of time to get to know each other.

Cornucopia Chili

This was truly a wonderful chili. My whole family loved it. I used the amount of TVP called for and it seemed like way too much, though. I would use less next time, or possibly try flavored tofu crumbles.

Black Bean Vegetable Soup

This soup was delicious and had a perfect spiciness. It seemed a little thin--I would use less stock next time. My husband thought it would be good with crunchy tortilla strips, like tortilla soup.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

This sauce was delicious! I had homemade tortellini and I didn't want a sauce that would over-power their flavor. This sauce fit the bill perfectly. Next time I would use a bit more cheese (my family are big cheese-lovers) and I would add the green onions at the very end of the cooking. They got rather soggy and gray. This is definitely one that I'll keep.

Penne With Garlic Pesto

I didn't make the past dish, but I did make the pesto from this recipe. It was quite good! I've been looking for a lower-fat pesto and this recipe definitely fits the bill. I found that I didn't need quite as much broth as was called for and I did end up adding about 1/2 T. olive oil to make it a bit creamier. Also, use a low-sodium broth. For those who love the taste of pesto, but want to avoid some of the fat--this recipe is the way to go!

Rhubarb Crunch

One more review can't hurt, right? This recipe was very good. I did use more rhubarb, plus a can of cherries. Everyone in my family loved it. My husband thought it was perfect, but I would have made the crust a little less sweet--I found that it overpowered that nice rhubarb tang.

Chocolate Black Tea Cake

This cake was quite good. I dusted the top with powdered sugar and that seemed to be all the topping it needed. I don't know about letting it sit for a day--it was wonderfully moist the day I made it, but by the next day it had dried out and was much less appealing. It looks very dark and rich---decadent.

Cathy's Banana Bread

I guess I'll add my 0.02--this was very good banana bread (and I don't even particularly like banana bread!). I used plain yogurt instead of sour cream. Definitely better for you, but I missed the tang that sour cream would have given it. Also, I used more bananas. A very nice bread--moist, not overly sweet.

Chickpeas in Tomato Sauce With Feta and Wine

This recipe was very easy and quite good. I used red wine instead of white because that's what I had. And I supplemented the feta with a bit of blue cheese, because I didn't have quite enough feta. And it was all delicious! I think this dish would also be very good if you mashed the chickpeas slightly and used it as a filling for pita sandwiches (maybe with fresh sliced tomatoes, cucumber and ???)

Herman Cinnamon Rolls

These were quite yummy! I used my own starter. I also didn't use the raisins, and added a bit of lemon zest to the filling. They were tangy, but didn't quite have the 'sour' that I would have liked. Someday I'll get this sourdough thing right... =)
