Best Spinach Dip Ever

Candied Sweet Potatoes

I took many of the reviews and adapted this recipe for a recent potluck. My co-workers loved this, even people who never before liked yams were asking for the recipe. Even though I reduced much of the brown sugar, this was very sweet. Here is how I modified the recipe. ..... 4 pounds of yams, 1/4 cup of butter (salted), 1/2 cup brown sugar, 3 cups of miniature marshmallows, divided, 1/2 tsp vanilla, 1/4 tsp cinnamon, 1/8 tsp nutmeg. ..... Many people claim baked potatoes provide the best taste and texture. So, I baked the cleaned yams for 45 minutes in a 350 F degree oven. After removing the yams and letting them cool, I peeled the yams, and mashed them. Then I folded the marshmallow/sugar mixture into the yams. Once mixed, I placed the mix in a baking dish, let them bake for approx 30 minutes at 350F degrees. After 30 minutes, I placed the mini marshmallows on top of the dish and let bake another 5 minutes. Just long enough for the marshmallows to puff and get a touch golden.

Blueberry Zucchini Bread

Very yummy and a keeper! I made this according to the recipe without any changes. This is the first time I have made zucchini bread, as this is also the first year I have zucchini in my garden. What a great garden treat. I love the addition of blueberries, too. Next time, I would like to try the adapted version (applesauce substitution) and I would like to add CookingQueens crumb topping.

Light Zucchini Casserole

I made this according to the recipe. This tasted good, although, I am not sure I would make this again. It seems like it is missing something. I do like the tangy taste, but I think the Bisquick mix makes it taste too much like processed food.

Too Much Chocolate Cake

A few weeks back I made this for an office potluck. I made two cake layers and topped one with chocolate satin glaze (which I purchased) and the other with whipped vanilla frosting. All of us agreed we liked the chocolate satin glaze over the whipped vanilla frosting. The glaze really brings out the other chocolate layered flavors of the cake. Overall, the cake with glaze topping was a huge hit, but not the cake topped with frosting. And no one asked for the recipe and the frosting topped cake was not really touched. Chocolate glaze prep is a keeper. I did use milk instead of water. Next time, I will melt the chips a bit, then add the melted chips to the batter. I think I would prefer the evenness of the chocolate throughout the cake, instead of bits of chocolate.

Zucchini Provencal

This is a wonderful dish, I really enjoy how all the flavors blend together. Next time I will add a tablespoon or 2 of dry white wine and some fresh oregano. I love being able to go to the garden to select all the ingredients to make an entire meal - fast, easy to prepare meal. A slice of sourdough completes this meal for my vegetarian son.

Swordfish a la Siciliana

I lost this recipe some years ago and was so disappointed when (over the years) I could not find it on the internet. Now, I have found it and am ever so happy! I used to make this with halibut instead of sword fish.

Stuffed Peppers My Way

I thought this recipe calls for too much salt and feta cheese. Given the saltiness of the feta cheese I would cut out the salt. I would also reduce the amount of feta cheese to half. I am one to put in extra feta, but since this called for 1/2 cup, I did not add extra cheese. The texture was nice. If I were to make this again, I would add mushrooms, not use salt, and 1/8 cup of feta. I like the idea of topping with a slice of cheese.

Pasta Siciliano

I discovered this delicious recipe a year and half ago. This is very fast and easy to make. Plus, it is very inexpensive. I make this recipe once every 3 weeks, now. Even my very picky, hard to please uncle loves this dish and asked for the recipe. I add oregano, thyme, and rosemary - sprinkle my share when simmering the sauce.

Sweet Dinner Rolls

I have been using this recipe almost 10 years, now. During holidays, my extended family is always asking me if I will be making these rolls. These rolls are the children's favorites. I also once used the dough for cinnamon buns, very delicious.

Chuck's Favorite Mac and Cheese

This was super easy and quick to make. I followed the recipe and my dish was dry. After I pulled it from the oven, I added aditional cheese. Next time, I will add the 1/4 to 1/2 C of milk and extra 4 oz of cheese, maybe montery jack, and only top with 1/4 cup of bread crumbs. For the size baking dish I used, there was too much crumbs. This is a great dish to add extras to: peas, ham, tuna, ect.

Veggie Pot Pie

This was a yummy fresh vegetable dinner, with the flexibility for a lot of different substitutions (like change of vegetables, addition of chicken, etc.). Like others, I would add more cornstarch. I added extra, but not enough.
