Award Winning Soft Chocolate Chip Cookies

I halved the recipe and added a tsp of salt -- because any good chocolate chip cookie recipe calls for salt -- but otherwise followed it to the letter. These turned out absolutely perfectly. They were done in 9 minutes flat, but I was making them pretty small. This will be my go-to cookie recipe from now on.

Zucchini Bread VI

This is, hands down, my favorite zucchini bread recipe I've ever tried. I subbed applesauce for the oil as I always do when baking, but otherwise stuck to the recipe and it was perfect. Moist but not too dense or heavy. I don't know why it never occurred to me to use lemon extract before, but it's just the thing all of my other zucchini bread recipes were lacking. I'll be making this for years to come.

Southwest Chicken Casserole

I made this pretty close to as it was written. The only changes I made were that I used chicken breast I'd boiled myself and cut up, since I dislike canned meat, and I baked it at 350 for 25 minutes rather than microwaved. It was okay. It turned out fine and we ate it and liked it well enough, but it seemed to be missing something. My husband and I stirred in some salsa with ours and that helped a bit. I'll probably make this again, but I'll add either some corn or black beans, and something else for seasoning. I think a mixture of cheddar cheese and pepperjack cheese would be good. Overall, a quick and basic recipe that just needs a little tweaking.

Rachel's Cream Cheese Fruit Salad

Yum! This is simple, quick, and relatively inexpensive to make. Most importantly, it's delicious. Like a lot of others, I omitted the pretzels and it was fine without them. I'm sure I will make this salad again and again.

Bruschetta Chicken Bake

This was delicious and SO easy. It turned out a tad bit too salty for my taste, so I'll use less salt next time and maybe slightly less garlic. A full tablespoon of minced garlic can be a bit much, but then the diced tomatoes I used had garlic in them, too (I used the Italian canned tomatoes with garlic, basil and Oregano). Otherwise, very good and simple recipe. My husband loved it.

Zesty Zucchini and Squash

I've made this a couple of times with a slight variation. I'm not crazy about green chile peppers, so I use the canned tomatoes with Italian seasoning in them (usually basil, oregano and garlic). It's pretty good. Not knock-your-socks-off great or anything, but good. Easy way to use fresh produce from the farmer's market in the fall.

Sweet Potato Casserole II

This is the best Sweet Potato Casserole I have made. Two years ago I couldn't find my old stand-by recipe for Thanksgiving so I used this one. This year my nephew heard that I might not make this for Thanksgiving dinner and he started to cry! Obviously it was a hit the first time around. I did make it again this year, and everyone loved it. The only modifications I make are that I use butter instead of margarine, and I throw in a pinch of nutmeg and a pinch of salt. Delicious.

Chocolate Spiders

Super easy, super quick, super cute. I made them for a family Halloween party and the kids loved them. Like other reviewers, I used chocolate chips and melted them in the microwave. I used white chocolate chips, point side down, for the eyes and put a tiny dot of black on them for the pupil (I had black frosting left over from sugar cookies). The whole thing took less than 10 minutes. I'm sure I'll make these every year!

Caramelized Brussels Sprouts with Pistachios

This recipe is fantastic and definitely a keeper! I love Brussels sprouts and usually just steam them and toss in butter, salt and pepper. But my husband has never been crazy about them, so I decided to try something new to see if I could change his mind about Brussels sprouts. And this was a big hit! Even my toddler loved them. I followed the recipe exactly, except that I used regular butter instead of unsalted, and I forgot to buy pecans, so I just left them out. It is perfect as written. Next time I'll try it with the pecans.

Sugar Cookie Frosting

Excellent frosting recipe! I used butter instead of shortening, but otherwise followed this as written and it was fantastic. Like another reviewer said, it's a thick "frosting," and not an "icing." It was exactly what I was looking for, set up well enough on the cookies so that I could stack them, and tasted great. I'll be using this one over and over again.

Heavenly White Cake

This recipe made a great tasting white cake. I followed the other reviewers' suggestions about the order in which to do the steps and I think that helped. Definitely don't forget to sift the flour before measuring it. And just a side note: I didn't have regular milk so I just used the vanilla soymilk I had on hand and it still worked out perfectly.
