Sopapilla Cheesecake Pie

Oh my goodness.. this was so much better than I thought it would be!! The only thing I did differently was that I used generic, regular vanilla extract. (Poor college students can't exactly spend a lot of $$ on things like vanilla extract!) I was a little worried when I took it out and the cinn/sugar butter was sort of just floating on top. But after giving it the proper time to cool it turned out beautifully! Took this to work during the week of Christmas and several people requested the recipe. Thank you so much for sharing!

Blackened Chicken

Honestly wasn't impressed. I doubled the amount of spices b/c we had 4 halves instead of 2. Followed everything else as written aside from the baking time, which was more like 15-20 minutes. Very juicy but tasted more like a taco seasoning. With that being said, I would use this as seasoning for chicken tacos, but not again for baked chicken.

Dirt Cake I

I feel like I should probably make this again before rating it because I sent the hubby to the store for the pudding and didn't think to check the ounces. I'm pretty sure he got the bigger boxes (maybe 5oz instead of 3.5). So, there was a heavier vanilla flavor than I would have liked but nonetheless there were NO leftovers after the family reunion I'd made this for! I'll have to make it again to give it a fair rating but even with the mistake I'd still give it a solid 4 stars. SUPER easy to make and pretty economical, always a crowd pleaser.

Country Apple Dumplings

These were surprisingly good. Took them to a family reunion and no leftovers to take home! I wish I could figure out a way to the outside a little crispier but they weren't terribly soggy, really. I certainly think they'd be better fresh from the oven with some ice cream! I used 3 apples, probably Golden Delicious. Cut them into six wedges instead of eight. Used 1 cup white sugar, 1/2 cup brown sugar, added 1 tsp vanilla extract, & only about 4-6 oz of Sun Drop (soda machine was out of Mt. Dew). Beautifully golden brown after 25-30 minutes! Whole house smelled great!

Easy OREO Truffles

Warning: ADDICTIVE!! These little gems are super rich and super yummy! Takes some patience sometimes to get the chocolate coating to be nice and smooth but well worth it! Made these for Christmas about 4 years ago and have made them every year since.

Lemon Garlic Tilapia

This couldn't have been easier!! I used 3 cloves of garlic as we like a lot. I also added a dash of oregano. Next time I think I'll use this as more of a marinade and let the fish hang out in it for awhile before baking. Baked for 20 min at 375 and it came out perfect!

BBQ Chicken Pizza II

I used a little more sauce than the recipe called for and I think it would've been better had I stuck with the original amount. (On mine, the BBQ sauce was a little overpowering.) I also cooked the green pepper and onions before adding it to the pizza b/c I don't really like a strong onion taste or the crunch that comes along with it. I shredded a piece of chicken breast that I'd let cook in the crock pot until it was falling apart and then placed it back in the crock pot with BBQ sauce to simmer for about 30 minutes. Put the BBQ sauce & chicken on homemade dough (cheaper than pre-made) and then put the onions and pepper on, followed by the cheese. Pretty good, but even better the 2nd day!

Homemade Black Bean Veggie Burgers

I don't have a food processor so I did things a little differently. First, I chopped up my onion, and pepper (I used green and red), added it all to a skillet with a little EVOO and then put in some minced garlic. Mashed up the beans, realized I was out of hot sauce and cumin, so I substituted BBQ sauce and paprika with a dash of cayenne. Followed cooking directions, and added a slice of pepper jack cheese to it. Not close to tasting like a real burger but pretty good, definitely better than store bought and even most restaurants!

Banana Milk Drink

Simply delicious! We had a banana laying on the counter that was a little too ripe to eat so I decided to try this out.. glad I did! I didn't add vanilla because I was out but it was still sweet enough. I think with the vanilla I might cut the sugar down to 1 tbsp. The cinnamon really complemented the banana flavor as well!

Orzo with Parmesan and Basil

So easy, quick, and tasty! I didn't have any chicken stock so I just added 2 bouillon cubes to 2 cups boiling water, let that dissolve while I browned my orzo, and then added. The only other change I made was to add some minced garlic, as I do to everything I cook ;) I would have to agree with others in saying that this recipe could really be adapted to whatever your personal tastes may be.

Soft, Moist and Gooey Cinnamon Buns

These were really good, but I think they could've used a little more cinnamon. I did use the cream cheese icing from the "Clone of a Cinnabon" recipe. I did have some trouble in making these though, which probably had to do with my technique more than the validity of the recipe. I had to mix by hand, and didn't add the vanilla pudding. My dough didn't rise much at all, and kept sticking to my counter when trying to roll it up. I did sprinkle some flour on it so I'm not sure why it was so sticky. Like I said though, they taste pretty great!

Pecan Rice

This was very good & filling! I cooked it in chicken broth (good ole' Swanson) instead of water to give it more flavor. Also, I use dried parsley since it's what I had on hand. The pecans & ginger gave it a great flavor! Also, I think it makes more like 5 servings instead of 4. I served it with a roasted broccoli from this site and Hawaiian chicken from Cooking Light magazine. Husband said the meal was "restaurant quality" :)
