Grilled Kingfish

This is a delicious recipe and so easy. I have cooked far more elaborate recipes for fish that weren't as tasty. A real keeper.

Simple Turkey Chili

This is one of my favorite turkey chili recipes. I added chopped zucchini, celery and carrots to the onions and garlic so it would be a healthy one pot meal. I also added cinnamon, one cup of water and left out the cayenne pepper. All in all, a delicious meal! My husband loved it served with corn muffins.

Mad Hatter Salad

Barbecue Ribs

These ribs were delicious, succulent and moist. I prepared them the night before, as suggested. I even cooked another slab and added them to the marinade the next day! My family loved them and I have extra meals that I can freeze.

Debdoozie's Blue Ribbon Chili

I think this may be the best chili I have made over the years. I used 1 pound sirloin and 1 pound ground turkey. I used the Chili Seasoning Mix II on this site and the result was just delicious. A real keeper.

Chocolate Eclair Cake

This was a delicious surprise which tasted very much like an eclair. I followed the recipe, but used sugar free pudding, skim milk, 1/2 splenda and 1/2 powdered sugar and low fat graham crackers. The homemade sauce is delicious and should be made first, so it can cool while preparing the cake. It cut beautifully after only a couple of hours in the refrigerator. Can't wait to serve it to company.

Greek Chicken Pasta

YUM! I made this last night after looking for a recipe to use leftover rotisserie chicken. It was delicious. I added the cut up chicken at the end to heat up. I also used 1/2 as much pasta since it's only the two of us. I will add a can of tomatoes tonight when I heat it up.

Coconut Shrimp I

Both my husband and I loved this. I sautéed the shrimp in coconut oil rather than deep fry them. I did refrigerate the batter for a couple of hours and, once it was on the shrimp, refrigerated again for 30 minutes. I had no problem with the batter adhering to the shrimp. I had shrimp and batter left over but no more coconut, so I made shrimp cocktail with the remaining shrimp and served it cold with cocktail sauce. It was a very shrimpy dinner for two nights in a row. I will definitely be making these again when my son visits as it is one of his favorite foods.

Turkey Pot Pie I

Delicious. I baked it in a 9x13 pan and only used a top crust to cut calories, and used extra vegetables as well. I mixed 3 cups of water with a chicken base and had lots of delicious gravy. This is a keeper!

Rhubarb Cake I

This is an extremely moist, delicious cake. As recommended by other reviewers, I used half butter and half applesauce. I also cut the sugar to one cup (using 1/2 c Splenda). To further save calories, I just mixed a little brown sugar with cinnamon and sprinkled the top. The cake was so delicious, I will not put any topping on my next version. I also added blueberries to enhance the rhubarb.

Donut Muffins

I made these a couple of hours ago. I ate one warm and thought it was quite good. I am waiting for hubby to come home for his opinion! I followed the recipe, but used less sugar in the batter and almond milk, hoping to make them a bit more nutritious! I also would not use melted butter to top them when I make them again. They are tasty enough that all they need is some cinnamon and sugar or splenda mix. I got 22 mini muffins, but they did not puff up as so many said.

Heather's Grilled Salmon

Delicious. I marinated the salmon for about 2 hours and cooked it in a grill pan about 4 minutes each side. My husband and I love seafood, but he has never been particularly fond of salmon until I made this recipe.

Rhubarb-Raspberry Crunch

This is a delicious recipe with a good balance of sweet and tart. I used half sugar and half Splenda (about 3/4 c total) and used strawberries rather than raspberries. My husband loved the topping, which I pulsed in the food processor. I had no problem filling a 9x13 dish, but I doubt it would serve 24, unless you only took a couple of tablespoons.
