Smoked Salmon Frittata

I often have leftover lox (smoked salmon) and this recipe is the perfect combination of ingredients for breakfast or brunch. I omitted the olives (hubby does not like them) and used capers, which actually goes better with the lox and cream cheese. A delicious recipe which I will make often. Thanks Debbist.

Sherry Braised Beef Short Ribs

Made this tonight for 4th of July (after finding the ribs in my freezer from last November). I followed the recipe exactly, only halved it as I had a little over two pounds of boneless short ribs. They were perfectly fork tender after 1-1/2 hours. I couldn't believe how thick the gravy got after ten minutes. Served with baked potato and string beans almandine. May put the leftovers over pasta or polenta. Thank you, Chef John, for another excellent recipe. My husband also thanks you!

Jackie's Fresh Peach Cobbler

I just made this for Father's Day and my husband said it was delicious. I loved that it was low in calories, but I did use much less sugar than called for as we do not like super sweet desserts. I used a little less than 1/4 cup sugar over the peaches and it was still too sweet, so I added a couple more peaches. Next time I will taste the peaches first! I also used that same amount of sugar in the batter.

Emma's Belgian Waffles

I would actually give this recipe 4 1/2 stars as I did deviate a bit, not separating the eggs in the mix. I made my own self rising flour by removing 2 tsp of flour from each cup and adding 1 1/2 tsp baking powder and 1/2 tsp salt into the mix. I also used half butter and half applesauce. I do that for baking muffins, sweet breads, etc. so I thought I would try it with the waffles. It worked very well in my Presto Belgian Waffle Maker. My husband thought they were the best of all the recipes I have tried, and they freeze well. Next time I would like to prepare the batter the night before. I am not a morning person.

Mushroom Crusted Ham and Cheese Pie

I had leftover ham and wanted to use it in a creative way. This was absolutely delicious. We had it for dinner and it was quite filling. I used an assortment of exotic mushrooms and baby portabellas as well as minced fresh garlic. It was probably closer to 15 oz, but definitely made the crust delicious. I also substituted cream cheese with chives and onions as this is what I had. I cannot wait to make it for company.

Roasted Cauliflower 'Steaks'

I can't believe how delicious this was! The only way I used to like cauliflower was simmered, mashed and mixed in with potatoes. Both my husband and I thought this was excellent, and better than roasting it whole. We had the leftovers for lunch today and it was delicious cold as well. I made it just as written and wouldn't change a thing.

Lemon Bread

I was looking for a way to use the lemons from our Meyer lemon tree and found lots of lemon bread recipes. This is the first one I made and it was excellent; however, I doubled the zest, cut the sugars in half, and used powdered sugar in the glaze. I also used butter. Delicious.

Belgian Waffles

I just received my new Belgian Waffle Maker and decided to make them for dinner and freeze the leftovers. They were delicious. I've never made waffles but I will be making this recipe often! My husband has always made the waffles in our old, two waffle iron. After many years, we decided to replace it and I bought the Presto Flip Belgian waffle maker. My batter rose so much, it dripped over the bowl; fortunately it was on a cookie sheet in the oven, so I managed to save the overflow. Next time I know to use a larger bowl. It was a time consuming recipe and uses lots of bowls, so I can see why most like to make it and store it overnight. A keeper for sure.

Chocolate Chip Shortbread Cookies II

I always make cookies that will travel well for the holidays. I made these for the first time and my granddaughters just loved them. My husband thought they were the best I've ever made. It is definitely going into my recipe file for the holidays. Delicious cookies; I wouldn't change a thing.

Pumpkin Bread III

This is my favorite pumpkin bread. I bake it in loaf pans and use 1/2 oil and 1/2 applesauce. I use a pumpkin spice mix that I make myself. Delicious!

Chef John's Salmon Cakes

This was my favorite salmon cake recipe by far. I did add Old Bay instead of cayenne and some grated onion in the mix, as well as Panko, since I did not have saltine crackers. I thought it might be too runny with two eggs, but I refrigerated the cakes for a couple of hours before I cooked them and they were sublime! A keeper.

Tortellini and Artichoke Salad

This was delicious! I dropped half of my tortellini on the floor and added small pasta to make up the difference and it still came out spectacular. I also added grape tomatoes. I am a fan of artichokes but my husband is not, and he loved it too (even with extra artichoke liquid!) A keeper in my book.

Donut Muffins

I made these a couple of hours ago. I ate one warm and thought it was quite good. I am waiting for hubby to come home for his opinion! I followed the recipe, but used less sugar in the batter and almond milk, hoping to make them a bit more nutritious! I also would not use melted butter to top them when I make them again. They are tasty enough that all they need is some cinnamon and sugar or splenda mix. I got 22 mini muffins, but they did not puff up as so many said.

Amazing Muffin Cups

These were delicious. You can add or delete and make this your own which is great. My only problem was with them sticking to a nonstick and very well sprayed muffin tin. Will have to figure that problem out. I used a mixture of cheeses that I had and, instead of sausages, I used pancetta. I made half the recipe and will freeze the leftovers.

Cranberry Chutney I

As suggested by many reviewers, I made this chutney (with less vinegar) to go over a turkey tenderloin. My gravy loving husband absolutely thought the chutney was delicious. We have turkey often and I will be making this just as often!

Sicilian Ricotta Cheesecake

This is the easiest and most delicious cake ever! We loved the lightness of it and I made a strawberry glaze to go over it. A keeper for sure. I followed other reviewers' recommendations and used 5 eggs.
