Roasted Cauliflower 'Steaks'
I can't believe how delicious this was! The only way I used to like cauliflower was simmered, mashed and mixed in with potatoes. Both my husband and I thought this was excellent, and better than roasting it whole. We had the leftovers for lunch today and it was delicious cold as well. I made it just as written and wouldn't change a thing.

Lemon Bread
I was looking for a way to use the lemons from our Meyer lemon tree and found lots of lemon bread recipes. This is the first one I made and it was excellent; however, I doubled the zest, cut the sugars in half, and used powdered sugar in the glaze. I also used butter. Delicious.

Belgian Waffles
I just received my new Belgian Waffle Maker and decided to make them for dinner and freeze the leftovers. They were delicious. I've never made waffles but I will be making this recipe often! My husband has always made the waffles in our old, two waffle iron. After many years, we decided to replace it and I bought the Presto Flip Belgian waffle maker. My batter rose so much, it dripped over the bowl; fortunately it was on a cookie sheet in the oven, so I managed to save the overflow. Next time I know to use a larger bowl. It was a time consuming recipe and uses lots of bowls, so I can see why most like to make it and store it overnight. A keeper for sure.
