Microwave Peanut Brittle

I have made peanut brittle the old fashioned way for years at Christmas as part of my Christmas treats and its aleays been time consuming- you have to watch it or it can scortch in a flash. Well no more!! This recipe is so easy! I made 4 batches this morning and already have them bagged! I did not change the ingredients and used dry roasted store brand peanuts. My hints: if you have one use a Silicone baking mats on your cookie sheet (I use the half-sheet pans and every baker should have at least two silicone mats !!!), 4 cup pyrex measuring cup sprayed with Pam and then wiped out with a paper towel(the handle on the measuring cup helps so much!!), silcone spatula sprayed with Pam and wiped off (washed and re-sprayed after each stirring) and very hot soapy water to clean up. I have a 1000 watt microwave and it came out perfect with the specified times. You have to wotk fast because it sets up so quickly!! Each batch made just about a pound of brittle.

Delicious Ham and Potato Soup

Oh so delicious! Made it twice- first time followed recipe almost to the "T". Second time cooked the onion and celery in butter until translucent. Then added the potatoes covered in chicken broth, when just about fork tender took a potato masher and mashed most of the potatoes. Then added the ham and about a cup of grated cheddar cheese. Thickened up with out adding the flour mix. Added some milk to thin it out. Soooo good!

Great Pumpkin Dessert

LOVE this dessert! I have made it many times and it ALWAYS gets rave reviews! Made it again today but decided to try it with fresh pumpkin (from a pie pumpkin, about 2 cups), a spice cake mix and pecans- it is delicious this way too! Other than that I don't change a thing. Serve warm with vanilla ice cream, or room temp with whipped cream. One suggestion- I sift or stir my cake mix before I sprinkle it over the pumpkin to make sure it spreads evenly. You and your guests will not be disappointed!

Cranberry Scones

This is a delicious and tender scone. I just tweaked it a little: used dried cranberries that I re hydrated in some hot water. I also added the grated rind and the juice from one orange (about 2 T + the buttermilk to equal 3/4 cup). I also brushed the tops with cream. Will make this again and again!!

Cheddar Buttermilk Biscuits

Oh my gosh! These biscuits are to die for! Doubled the recipe, left out cayenne by mistake, but other than that followed it exactly. Oh so good- my daughter ate 3! Probably cooked for 18 minutes in my 400 degree convection oven. Want to try without the cheese so I can have them with jam or honey!!! Will definitely make again and again!

Peanut Blossoms II

Delicious! I had to add a little more flour to make the dough thick enough to roll, but the result were beautiful! I used the Extra Dark kisses and the ones with caramel. My family and friends LOVE these!

Mom's Best Peanut Brittle

My first try did not go so well- over cooked it. So I went back and read some reviews Second try- the results are AWESOME! I cooked the sugar mixture first- you need to watch closely after is reaches 220 degrees - immediately pulled pan off of heat once the temp reached 300, stirred in peanuts at the end because I used roasted/salted Spanish peanuts (skin on)then added butter, baking soda and 1tsp vanilla. Yum, yum, yum!!

Super-Easy Rocky Road Fudge

LOVE this recipe! So, so, so easy! Took longer to assemble the ingredients than to actually make! I used 6 oz milk chocolate chips and 6 oz dark chocolate chips. Everyone (kids & friends) raved. Will make again and again!
