Dark Chocolate Bacon Cupcakes

Reviewed: Feb. 28, 2011
Wow! These were a really fun/funny!! I was a little concerned about the batter being so runny but after the first batch came out I knew they'd be fine. One note to readers is to use a pourable container to pour the batter into the cups and make sure to fill only 2/3rds full as they rise quite a bit! I'm gonna take them into work tomorrow and I'm sure my coworkers will get a kick out of them! My family really liked them. I thought it was the perfect marriage of salty/sweet. Wouldn't have been as rich of a flavour without the coffee so don't skip on the recipe! I didn't have any buttermilk on hand so I used 1 Tbls. White vinegar to 1 scant cup of milk and let sit for 5 min before using. Worked like a charm!

Luscious Four-Layer PHILLY Pumpkin Cake

Reviewed: Dec. 17, 2010
My hubbies all time fav!! I'm an accomplished baker and I made this on a whim!! He had no idea it was only semi- homemade, I kinda don't want to tell him how easy it was to make! Put flour on my face and whined about how much trouble I went to! Hope my secret is safe!! JK!! Definetly a keeper!! Added vanilla to filling mix (3/4) tsp. Much better..recipe is fine the way it is, just take care slicing cakes in half!! Take your time and use a serrated knife! No trouble at all!!

Pumpkin Mousse Cheesecake

Reviewed: Nov. 26, 2010
Made this cheesecake for thanksgiving.. It was so easy and so delicious, the top cracked after I pulled it out of the oven, but I smothered the top with whipped cream. I've never made a cheesecake that didn't crack though! I will be making this cheesecake again next year at the request of my family!!

Strawberry Vanilla Pancakes

Reviewed: Jul. 2, 2009
These pancakes were yummy however there are a few minor changes I made and I'm glad I did. First the batter was VERY thin. I added 1/4 to 1/3 of a cup more flour. I also thought they were quite salty, next time I will decrease the salt. I also added some pink food coloring, and I finished the pancakes with freshly whipped cream, powdered sugar and pink sprinkles... fun and girly, perfect for a girls princess sleepover breakfast!!!

Classic Hollandaise Sauce

Reviewed: Jun. 30, 2009
Okay, so this was my first time making Hollandaise sauce.. I followed the recipe exactly except for the salt and pepper amounts as per reviews. The sauce broke appox. three mins into my constant whisking despite the addition of cold water I had on hand just in case.. not sure where I went wrong, I think I'll cheat next time with a blender recipe.
