Sweet and Spicy Green Beans
Great recipe. My modification. I made 1.5 times the recipe for 5 people and it wasn't quite enough, next time I'll double it. I didn't have "garlic chili sauce" so I used 2 parts "Patak's garlic relish" and 1 part "Lee Kum Kee Hoisin Sauce" from the Asian market. The soy sauce I used was Tamari from the natural foods store. I used a bit more garlic than called for. I have no patience for steaming so I blanched my fresh local green beans for 2:30 minutes. Fried in the hot oil for another 3 minutes, and after the sauce added 2 more.

Kale Chips
Love these! Made them with Collards the other day and they were incredible. They're a great way to deal with a large amount of greens on hand although mustards don't work for these; but collard greens & turnip greens do. I cut the stalks out with a chef's nice and save them to blend into other recipes (like beef and barley soup or home made shepherd's pie.) Also you can't wing it with the measurements on the oil and vinegar/using this method of measurement of oil then oil then vinegar in this recipe works every time I just hand toss them in a bowl. They need to be spread out in a large baking sheet helps also. First time I thought I'd burn them but I haven't adjusted the cooking time much from this. Mainly I check them til they look right, when they're just crunchy but not too dark of a brown they're perfect.

Cajun Spicy Potato Wedges
This is the recipe that made me finally break down and register... (every time I go searching for a recipe online I find the perfect one here.) This dish was wonderful but wished I'd added salt while tossing. I will next time. I cut them more like home fries and used a deep baking pan for about 6 servings and did the tossing right in the pan (a lot how I do a different roasted root veggies dish.) Came out great and was a big hit at our house! Yum!
