Gloomy Day Smoothie

Very yummy! I used frozen mango pieces and it made it just a bit chilled without being too cold for my 21 month old. We all loved it. :) I put cinnamon on mine. Yum.

Poached Orange Pears

I made them as instructed with a little twist. Lots of Cinnamon (ground), 2 tsp. vanilla, 1 1/2 c. white wine, served with Marscapone, the sauce (boiled down with some sugar) and melted semisweet chocolate drizzled on top. It was enjoyed by all. My pears were organic and a little under-ripe so I let them simmer for about an hour on the stove. Very Yummy. Will make again. :)

Strawberry Vanilla Pancakes

I made a very yummy and slightly healthier version of this recipe: 1/2 c. white flour, 1/3 c. whole wheat, 1/4 c. ground flax seed, same amount of brown sugar, baking powder, 3/4 tsp. salt, 2 eggs, 1 c. milk, no veg. oil, 1 1/2 tbsp. vanilla extract. 3/4 c. fresh strawberries and 1/3 c. semi-sweet chocolate chips. These were amazing! Thanks for the basic recipe. I love how it can be altered and still work! Yummy!

Creamy Chicken and Wild Rice Soup

Delicious! I also made the changes others suggested. I used garlic, carrots, celery, and onion as a base. I also used 2% milk instead of cream. It was wonderful with home-made whole wheat bread fresh out of the oven.
