Carrot Rice

I LOVE this recipe! A little time consuming for me, as I had to hand chop/grate everything. BUT, the end result was fantastic. This does make a HUGE batch of rice, so next time I will halve the recipe to work better for two people. Delish!

Cranberry Orange Cookies

Totally addictingly delicious! I needed to use up leftover cranberries from our "Early Thanksgiving," and found this quick and AWESOME recipe. SO good that I made it twice in the same week! I took the advice of others and used a bit less white sugar, and a little extra flour. I also did not make any frosting, and they were plenty sweet. I used the juice from the same orange I grated, and I added chopped hazelnuts to half of each batch too. I tried the first batch at 350 to be safe, but ended up baking the next batch at 375 and they came out just as good. These are phenomenal, and will definitely definitely DEFINITELY become a regular on my holiday baking list!

Garlic Crab Artichoke Dip

Delicious recipe! I added cream cheese as well, but I won't next time because it was super creamy (which was great), but it took away from the crab flavor. I couldn't find the dry soup mix, so I just added fresh chopped mushrooms and a few heavy shakes of garlic powder. Also, I doubled the crab and put 2 cans in instead of 1. Really glad I did. Overall, super yummy.

BBQ Pork for Sandwiches

Cornish Game Hens with Garlic and Rosemary

Incredibly juicy and it smells so good when its cooking. The flavor might be a tad bland, so I would make sure you bast the chicken VERY often and don't be shy with the garlic.

Be careful with this one, you really have to get the timing down when you fry them because they will come out too crispy or too mushy if you don't get it just right. But when you get it down, they are really authentic tasting. Take it from me-- I live right by the border!

SO GOOD. I used Marie Calendar's frozen pie crust, it went so perfectly with this sweet pumpkin pie. I loved it! Next time I'm trying fresh pumpkin instead of canned :)

Baked Teriyaki Chicken

This recipe was incredible. I followed it exactly and the chicken came out so juicy and the sauce was the perfect consistency. Even my picky boyfriend told all of his buddies at work about it :)

Chicken Tequila Fettuccini

EXCELLENT! I absolutely loved this dish, and I don't even LIKE jalapenos normally. My mega-picky boyfriend said we should serve this when we have company over! I threw the chicken in a pan separately and fried it up with "Kick'n Chicken" seasoning (from the grocery store, it's really good), soy sauce, and tequila; then I threw it in the sauce right before it was finished just to heat it up again. Don't boil your chicken, it will come out rubbery. I used 1 yellow, 1 orange, and 1 red bell pepper because I like the bright colors and sweet flavors better than green bells. Don't be light with the tequila, I added extra tequila and lime and it turned out incredible. One of my favorite dishes ever, I can't say enough good things. It's a lot of work, but SO worth it.
