Chinese Cabbage Salad II

I didn't have any almonds or sesame seeds, but this still turned out fabulous! I served this as a side to diced chicken breast that I coated and cooked in bottled hoisin sauce..easy, quick, and delicious!

Stuffed Pork Chops III

This was my first attempt at stuffed porkchops, I've always been scared to try them because they seem so difficult, but this wasn't at all! I followed it exactly as stated, except I did have to keep adding a little bit more broth to the pan as it cooked...with the leftover broth and "stuffing" in the pan, I added a little cornstarch and water and made a kind of dark gravy that I poured over the chops before serving...AMAZING.

Mouse's Macaroni and Cheese

Really really good! All I had was slices of American cheese on hand, and mini shells instead of macaroni and it actually worked out well! Right out of the oven it was almost too creamy and cheesy...but the second day, reheated...PERFECTION! This was my first attempt at homemade mac n'cheese and I'll definitely do this again.

Easy Meatloaf

Great, easy meatloaf! I used half ground turkey and half ground beef to make it a tad healthier, but to still stick together..Love the taste, just needed to be cooked a smidge longer, like 10-15 minutes as it was REALLY juicy! my go to recipe for meatloaf now!

Honey-Dijon Chicken

My sister and I love this recipe..as other viewers suggested, I use the remaining juices leftover after the chicken is baked and put it into a small saucepan, heating it and thickening it with a small amount of cornstarch and water...this glaze over the chicken is delicious!

Honey Lime Tilapia

I gave this recipe 5 out of 5 stars...it was great!!! Though I did make a few changes...I just made the fish minus the veggies, and cooked the fish in the marinade..After cooking the fish, I emptied the marinade from the baking dish into a small saucepan and added a little cornstarch and water to make a DELICIOUS sauce/glaze to go on top of the fish fillets. Seriously good.

Easiest Eggplant

This was actually very tasty...I spiced up the mayo with garlic, salt and pepper and oregano, and added parmesan to the bread crumbs (i only had ranch flavored crumbs in the pantry). Right out of the oven I sprinkled some shredded cheddar on top and had the eggplant with a garden salad topped with balsamic vinagrette...what I found was that the eggplant dipped in a bit of the vinagrette was the perfect ingredient missing! Id do this again.
