Strawberries Romanov

We had this for dessert after a Valentine's Day meal. It was the perfect finish! Not too heavy, but still totally delicious and decadent. Served in wine glasses-- it was really wonderful.

Traditional Style Vegan Shepherd's Pie

This was really a great recipe. I made it for a vegan potluck I hosted a couple weeks ago. It was a hit! The mashed potatoes were awesome-- I was a little skeptical about using veganaise but it was really decadent. I'm making this again for dinner tonight. I skipped the soy cheese on top-- it's so rich as it is. Thanks for sharing this.

Carrot Cake IV

I'm giving this recipe 3 stars because it was so convenient. I have to say, though, I thought it needed something more. For a quick, good carrot cake recipe, this works alright. I would probably make it from scratch if I had more time, though.

Vegetarian Tortilla Soup

The soup isn't finished and already I've burned my tongue from sneaking so many tastes. This is a really wonderful recipe. It's very user friendly and still tastes authentic. I added a can of jalepenos for an extra kick because we like to burn our tastebuds off in this family. My other addition was a jar of Goya brand Recaito which is a cilantro cooking base. Try adding some cilantro to this recipe--it brightens it up and balances the cumin. Can't wait to share this with my friends and family!

Vegetarian Cottage Cheese Patties

This is a great recipe. I was particularly happy to find it because it is both vegetarian and gluten-free (if you omit the wheat germ)which is a hard combination to come by sometimes. I baked it instead of frying, but would give it a little more baking time next time (probably 15 minutes in the oven, then top with the mushroom soup and bake 20 more minutes). Also, a tip for vegetarians: Make sure to check the label on the dry soup package. Some brands have animal fat in the mix. I will definitely make this again!

Best Tuna Melt (New Jersey Diner Style)

I don't think I've ever had a proper tuna melt. They aren't really served much where I'm from. So maybe I don't get it. This recipe looks okay and tastes okay, but I was expecting to be blown away after reading others' reviews and I really wasn't. It tasted pretty much like every tuna sandwich I've eaten. Which isn't bad! Just maybe not 'best.'

Antipasto Salad

This is a great recipe. After reading the reviews, I also added a chopped bell pepper (I used a yellow one) and the juice of one lemon. I also substituted olive oil-- but will use a little less next time. I didn't have mozzarella so I cut up some swiss cheese into very small cubes and let it marinate in the dressing. We ate this right after it was done while it was still warm and it was delicious-- we just couldn't wait! Also, this is a great vegetarian recipe when the pepperoni is omitted. I will definitely make this again.
