Cream Cheese Frosting II

Pecan Snack

We love these. I only make them during the holiday season, and everyone looks forward to it. I use vanilla instead of water, double the cinnamon, and bake them on a buttered baking sheet with sides. Decadent!

Bacon and Cheddar Stuffed Mushrooms

Delicious and easy! I doubled the recipe and used half an onion, cooked low and long before adding the mushroom stems. I also put the mushrooms in the oven to soften a bit before stuffing them. Everyone liked them!

Baked Cheese Olives

The kids (8 & 9) and I did this recipe for an afternoon snack. After the food processor mixed the dough, we used our hands to finish it. We broke the dough into 24 pieces before we started, and wrapped the flattened dough around each olive. We had to bake for 20 min to get brown. They turned out well. Both kids said they would make it again. The cheese and the strong olive taste is an interesting mix, but it gets addictive. Fun with the kids, but I wouldn't do it for a party - too much work!

Thighs on Rice

We enjoyed this recipe. Think of it as a base to which you can personalize for your family. I added carrots, mushrooms, garlic, Mrs. Dash, and exra Italian seasoning. I halved the onion amount, and didn't add the butter, but added a splash of olive oil. Next time, I don't think I will add any fat, the thighs don't need it. I also covered it. This it not fancy, but an easy dinner that you can throw together and stick in the oven 1-1.5 hours before dinner. Definatly a keeper!

Easy Garlic Broiled Chicken

This was easy and tasty. However, I had never broiled chicken before, and so I ended up turning the skin black. Luckily, we could just pull it off and the meat underneath was good! I only gave it 4 stars because it is so fatty. I think next time I will use less butter. It's a bit much and the fat from the chicken just adds more.

Oyster Sauce Chicken

Irish Cream Chocolate Cheesecake

I made this as a dessert for 11 people, and everyone loved it. It is very rich. I doubled the Irish Cream, and used graham crackers for the bottom. Wonderful!

Shortcut Chicken Cassoulet

This was very good. I made this last night, and everyone liked it. Since we had swim practice, I cut up and cooked the chicken, sausage, onions and carrots, and then put them in the fridge so the dish could be finished when we got home. It worked out very well - we were eating within 30 min. of getting home. I will definately make this again.

Ground Turkey Casserole

This tasted OK, but was bland. I mixed the tomato sauce up into the noodles, and with every bite tried to get a mix of the cheese and noodles. It gets points, however, because the kids and husband ate it without complaints.
