Pumpkin Swirl Bread

Very good. Easy. Would make a great gift for the holidays. I did 3 small loaf pans and what was left over I put in a 9x5 loaf and baked for 45 minutes. Tastes great after being refridgerated for breakfast!! My husband has been hounding me to find a recipe close to the Starbucks pumpkin bread. He said this was close enough and asked me to put this into rotation!

Chicken, Feta Cheese, and Sun-Dried Tomato Wraps

Just ehhh in my opinion. It needs something else. I almost think the Sun-Dried Tomato in oil would be better. My husband doesn't care for the texture of the tomato anyway.

Key Lime Cake II

Fast and easy. I used vanilla cake mix and vanilla pudding. I added the lime zest as suggested by others. I couldn't find key limes in my area so I used regular. The topping does sort of soak in, so I let some soak in, refridgerated part of it and drizzled a bit more on each cut piece. Tasty and light dessert.

Pumpkin Zucchini Bread

Fantastic!! Easy, and my 15 month old love it. I made 1 5x9 loaf and two small loaves which I froze. I didn't have the nuts it called for so I substituted some semi-sweet chocolate chips. I also used half whole wheat flour and half all-purpose. I put extra zucchini too just because I like to. I'll be making this again!!

Artichoke and Sun-Dried Tomato Chicken

Very good. Next time I will use 1 large whole butterfly breast instead of 2. I'm considering adding some goat cheese as well. This time, I used the whole container of sun-dried tomato pesto and two cans of the tomatoes to make it extra saucy. I used the leftovers the next day with some pasta that I cooked. I added about a half jar of store bought sun-dried tomato pasta sauce and it was even better than the night before. I served with some crispy bread. Overall, very easy and tasty.

Baked Dijon Chicken

Easy and tasty. Next time I'll increase the bread crumbs a bit. I added some extra dijon for dipping. I baked at 475 for 25 minutes.

Mini Tacos

These are a really good idea. I followed other reviewer suggestions and painted with EVOO. I won't be doing that next time. I also did 1/2 meat and 1/2 refried beans. They were cute, would have been perfect for a party but I made them as a weekend snack.

Meatball Nirvana

My first attempt at meatballs. Tasted good, very easy. I put them in spaghetti. I made mine smaller than this recipe called for so I ended up with over 20. I had planned to use the left overs on some meatball subs but there weren't any left!!

Slow-Cooked Chili

Easy and good. I usually do a turkey chili but my husband requested a "real meat" chili and I tried this one. I'm all for anything slow cooker. I added some extra veggies just to get them in our meal. But still would have been good without.

BLT Salad

I used turkey bacon. For the dressing I used 1/2 c. lite mayo, 2 heaping Tbsp lite sour cream and added the juice of one lemon, otherwise it was the same. I planned to add avocado but mine weren't ripe yet, so I'll try it next time. My husband ate 3 bowls of this!! I give 4 stars simply because the original recipe was way too fatty for my tastes.

BBQ Chicken Salad

I'm giving 5 stars after the changes I made, which were just to suit the tastes of my husband and myself. I used ranch dressing 2/3 cup, bbq sauce 1/3 cut (plus a little extra on top). Omitted the celery and added a can of rinsed, drained black beans. I didn't need the extra crunch and liked the flavor of the beans as opposed to the celery. Also, we ate it on 6-in. flour tortilla as sort of a wrap. It was delicious and easy. We just ate some leftovers!!

Artichoke Spinach Lasagna

Easy and delicious. I'm always looking for new ways to use frozen vegetables and I love making lasagna. This was great, my husband loved it and I'm sending the recipe on to my mom!!
