Oven Fried Chicken II

Made this yesterday. Came out extremely moist. Husband loved it, I found it a little bland. I used 1 tsp each of salt and pepper and I just couldn't taste it. Will change it up with season salt next time around and maybe some crushed red pepper and garlic.

Yankee-Doodle Sirloin Roast

Just made this yesterday and it came out excellent. I had a roast from the freezer so I wanted to make sure I added some flavor before roasting. I wondered whether the soy sauce would give it a teriyaki flavor that would be more suited to rice than potatoes. That wasn't the case, the marinade enhances the flavor of the beef and the drippings made for a flavorful gravy. Will use again and try this on grilled steak tips.

Boiled Bagels

This recipe goes together well. I will definitely make these again. The only change I'd make is letting them rise a little longer that 20 minutes. One note, when the bagels come out of the water, they are wet and stick, put them on something they won't stick to and take the opportunity to sprinkle them with a topping.

Cinnamon Roasted Sweet Potatoes

I made these and they tasted okay, but I found they were a little dry. However, I forgot the add the lime juice and this might have made a difference.

Steak Tip Marinade

I have made this repeatedly for my family and friends. I have bought the steak tips, made the marinade and frozen. Defrosted and just grilled them last week after about 6-7 weeks in the freezer and they were excellent. The Italian dressing in the recipe adds oil so they don't stick to the grill. I enjoy a stronger BBQ flavor, so I baste one side of the steak with additional sauce as they cook. Excellent recipe!

Thai Peanut Noodle Stir-Fry

Great taste! Based on other comments, I started out with only 1 Tbs of honey and 1 Tbs of brown sugar. Very happy with the result. Also, didn't have the sake but I everyone loved the flavor without this addition. I will definitely make this again. Thank you cooking mama.

Yukon Gold Mashed Potatoes with Roasted Shallots

I tested the recipe to see if I wanted to these for Thanksgiving dinner. Everyone agreed that they were good, but not great. I will mostly likely make them again, just not for a holiday meal when there's a lot going on in the kitchen already.

Zucchini Patties

These came out good, however, I think I would have enjoyed more seasoning. I used two zucchini as it collapses as it sits so what start as one medium really required two to get the required amount. They only reason I wouldn't try again was that no one else in the family would even try.

Best Marinara

This gets five stars for its ease of preparation and rich taste. I prepared it with tomato puree as my kids don't care for the texture of crushed. I did add two garden tomatoes. (Skipped the tomato paste.) I used fresh herbs from the garden and it was perfect. Will definitely make again and try using as a pizza sauce.

Tuscan Cream Cheese Spread

I made this recipe and based on the reviews limited the garlic and the scallion to one each. The flavor was there but not overpowering. When it comes these ingredients I always start out on the low side because you can always add more. I added the rest of the ingredients according to the recipe. Everyone liked it.

Balsamic Bruschetta

Excellent recipe. I did add chives to the mix, however, the basil tomato combination is wonderful on its own. I used small campari and plum tomatoes. The juicier campari added to the marinade. I served it with grill bread --bread dough that I rolled out like a pizza, seasoned with olive oil and italian seasonings, and cooked on my gas grill. Sprinkle with shredded parmesan as you take off grill. Slice cooked flat bread into squares for serving. Awesome!

Marinated Peppers

I served these on an antipasto salad. Everyone raved. I followed the recipe and made them two days in advance and topped the salad with them. The multiple colored peppers make for a beautiful presentation. Will definitely make again

Marinated Grilled Shrimp

Banana Crumb Muffins

Everyone loved these. I made one addition. I added chopped pecans to the crumb topping which I sprinkled on the last 5 minutes of cooking as others recommended.
