Meatloaf Cordon Bleu

I used ham cubes, muenster cheese, and the recommended thermometer. Glad I did because the inside looked "pink" from the ham. I also used the cream of mushroom soup idea. I would make this recipe again!

Delicious Angel Hair Pasta

I was not at all fond of this recipe. Too "sweet and sour" with the vinegar and sugar. It was a large amount of damp greens in a little juice. I didn't even use it, once it was done. I would add the cup of pasta water or maybe chicken broth to thin it out, and leave out the vinegar and sugar. Or more likely, just not make this again.

Cheesy Beef 'n' Rice

We don't eat beef, so I used ground pork and chicken bouillon. Also, had some leftover Chinese carryout rice from day before, so just used that and cut down on the water to about 1 cup. Served over canned stir fry vegetables and it was very good. No extra salt needed, the bouilion has enough

Tortillas I

Yum. Yes, took some time, but just think, no preservatives or weird chemicals you can not pronounce. Perfect as written for a savory filling, but I might add a little sugar to the dough to make sopapillas from these. I cut the recipe in 1/4 and it made 12 perfect 6 inch tortillas.

Blueberry Muffins I

Made exactly as directed, nice cakey texture, great flavor, but a bit dry. I would make it again, but add a touch more fat in form of butter, shortening, etc. Or just plan on using butter to spread on them. They ARE much better warm than cooled.

Perfect Baked Jerk Chicken

Not too spicy at all (this from a hot-hater). I cut out all the pepper types, but added 1/2 tsp red pepper. Left out the salt (low sodium diet) and was just scant on the 1/4 tsp ginger. A lot of recipes call for lime juice, I will try adding that - maybe 1T? - the next time. Also will add the spices to oil and marinate in a moist medium/ziplock bag, and maybe overnight as I didn't feel the dry rub was spreading like it should. Son complained it was not "real" jerk b/c of the non-heat, but I enjoyed this-will work well for "special" occasion needs.

Chewy Brownies

OMG- remind me why anybody would use a box mix? These are FANTASTIC. Made just as directed. I used the auto convert convection function on my new oven, but had to cook about 10 min longer than the oven thought I should (it converted to 325 but left the time at 27 minutes), which made me worry. Edges a little hard, but so chewy they blended right in, no complaints. I did oil the pan before adding batter, which may have added to a greasiness factor, but they came out of the pan all right. Great flavor and wonderfully chewy, not cakey at all.

Hot Milk Sponge Cake I

This cake turned out great, and I am notoriously BAD at making cake (they fall and other bad cake tricks). 5 stars for this one because it did not fail me. I followed the directions for the cake, only adding a tsp of vanilla to the listed ingredients. I did not add the topping, used a strawberry sauce - this was just the thing for strawberry shortcake type dessert. One trick for sure is don't get that milk and butter too hot or it might curdle the egg mixture. I actually might do that step after beating the eggs but before adding the flour/baking powder to give it time to cool down somewhat. Great cake!

Fluffy Whole Wheat Biscuits

Dough was indeed sticky. Kneading with a lot of flour was necessary. Might try adding less milk: I did not need the entire cup, and actually should have stopped (3/4 cup) before I added all that I did (not quite the whole cup). Good flavor if you like whole wheat and very tender dough. This made 16 small biscuits (2 inch biscuit cutter). Next time might try honey instead of the sugar to go with the whole wheat. I baked in melted butter (2 T)

Butter-Dipped Biscuit Squares

I cut the recipe in half, since there are only 2 of us. I also used the added salt/baking powder since I do not keep self-rising flour. the dough was sticky and hard to cut, and did not look very pretty, but they were very good, the others are right, my husband loved these. I though they needed more salt, and I can't wait to try them with garlic when my son comes home from college! Overall, great recipe, and I will use it again

Cherry Tomato Corn Salad

I used light mayonnaise instead of oil and sugar. Also used dried basil, about 1 Tablespoon and dried chives 1/2 tablespoon. Lime juice added a nice touch to this recipe. It becomes wetter as it sits overnight.
