Guacamole

This is the first Guacamole recipe I have ever made. It was soooo delicious and super easy!! I have made it 3 or 4 times now and the only changes I made was that I only added 1/4 cup onions because the onion flavor was a little too strong for me. I also added a little more garlic and an extra avacodo!! It was sooo yummie!! I will definitely be making this delicious recipe for years!! Thank you so much for sharing!!

Chocolate Chip Banana Muffins

My 7 year old son and I made these together and we were not disappointed. I am not a big fan of banana bread but these are so moist and yummie I couldn't stop eating them. I did not change a thing in the recipe. It was perfect as is!!

Veggie Pizza

This is sooo yummy and easy. I made it with whatever raw veggies I had and my son and I loved it. I also made it for dinner when he had his pickiest eater friend over and his picky eater friend asked for seconds!!

Applesauce Bars

These are Great! I made them for a snack for my son at his swim meet. I was trying to go a little healthier so I didn't use the frosting. I also used 1/2 c. all purpose flour and 1/2 c. whole wheat flour. And I don't have pumkin pie spice so I just threw in a dash or two of cinnamon, allspice, ginger, and nutmeg. So Good.

No Bake Bumpy Peanut Butter Nuggets

I am always looking for a quick and easy snack to grab and go. These fit the bill perfectly. I didn't add the coconut because I don't like it and because of that it was a little too Wheat Germy so I think next time I'll add a little more PB or some crushed peanuts. I also didn't have apple juice concentrate so I put in 1/8 c. apple sauce and 1/2 c. honey. I will definitely make these again. :)

Too Much Chocolate Cake

I made this for my son's teacher for Valentine's Day and it looked and smelled so yummie that I couldn't resist having a taste. Needless to say I had to make a second cake the next day to take to his teacher. The first time I baked this I followed the recipe exactly!! Soo Sooo Good!! The second time I turned the oven temp down to 330 because my oven cooks fast. I aslo used mine chocolate chips like other reviewers suggested. I didn't get a chance to taste the second cake but it sure looked good. I will definitely make this again. Yum Yum Yum

Brooke's Best Bombshell Brownies

These brownies are WAY too good!! My 8 year old son and I made them together to share with his basketball team. We made them exactly as the recipe said. If you think these turned out cakey then I think you did something wrong. These were almost more like fudge than a brownie. Exactly what I love in a brownie. We used the brownie frosting recipe from this site on the top and sprinkled valentine sprinkles over it for a fun and yummy valentine treat. Good job Brooke.

Brownie Frosting

Super yummie!! I didn't have a problem with it setting or with it being grainy from the sugar. Just make sure you boil it long enough. I used it on Brookes best bombshell brownies and it was a great combo.

Oatmeal Peanut Butter Cookies

Yummy!! I made these yesterday. I added 2 cups of chocolate chips and added 2 cups of oatmeal instead of 1 by mistake. They turned out Great!! Definitely don't over cook them. My first batch came out really undercooked so I cooked the rest a little longer and the ones that looked undercooked are better today.

Layered Chicken and Black Bean Enchilada Casserole

This was so good. I made it exactly as the recipe said and didn't have any sogginess. Next time I'm going to make a double batch so we can have leftovers. My 9 year old son was gobbling this up so fast so that he could have seconds before anyone else ate them all.

Easy OREO Truffles

These were SOOOO easy to make. The part that took the longest was rolling the truffles into balls. But it was worth it. I definitely recomend chilling the truffle balls before dipping them in the chocolate. I didn't have any problems with them breaking. I made a second or third batch with PB oreos and Mint oreos. The PB ones I also substituted about 1/3 of the cream cheese with peanut buttter and added a little but of peanut butter to the melted chocolate. I sprinkled chopped peanuts on the top which looked nice. The mint ones I added a little peppermint extract to the truffle and to the chocolate and crushed candy canes to sprinkle on top. Soo yummy and soo easy. I will definitely make these again. :)

Tiramisu Layer Cake

YUM!!! I've made this cake twice now. The first time was for my sister's birthday and everyone that tried it loved it. I couldn't find marscapone cheese anywhere in my town so just used cream cheese and it was great. The second time I made it was with my sister who wanted to make it for someone else's birthday. I found a way to make marscapone cheese with cream cheese and powdered sugar so I tried that. This cake takes a while to make with all the layers and cooling the cake but it's not that hard and it tastes so great. I will definitely be making this again. :)
