Garlic Kale

Baked Yam Fries with Dip

Mushroom Chicken Piccata

I began with step 3, reduced sauce mixture to desired consistency and kept it warm in pan of hot water on stove. I also added some cayenne pepper to give the sauce a little zip. I avoided step 1 by using (really!) supermarket-prepared chicken pieces. After I sautéed the chicken, I removed pieces to a warming platter, sautéed the mushrooms and onions and removed them as well. When ready to serve I returned warm chicken, mushrooms and onions to pan and poured heated mixture on top. It worked out very well.

Delicious Grape Salad

Mixed reviews from absolutely loved it to I'd rather have a handful of grapes. I'm not crazy about the graham cracker bottom crust. It gets pretty soggy. Next time I'll take one reviewer's advice and do the graham crackers on top--and definitely add some Bailey's to the cream cheese mix.

Good Old Fashioned Pancakes

Oven-Roasted Asparagus

This is a WOW! The asparagus tips got almost crispy. I loved this preparation and will use it again and again. I lined my pan with a sheet of tin foil for super easy clean up. I will also experiment with the amount of oil. I'd like to do with a little less.

Apricot Brown Sugar Ham

I thought I already had the world's best recipe for perfect ham. But this beat it! I used a pre-sliced 11 pound ham and did not enclose it in foil. Also, because I was short on time I set oven temperature at 350 and baked the ham for 2 hours and 45 minutes. It looked absolutely beautiful and tasted absolutely wonderful.

Mediterranean Chicken

Following earlier suggestions I used 2 large cans of diced tomatoes, doubled the garlic and fresh basil, added crushed red pepper, hot sauce and sprinkled on a little dried thyme. I also used a jar of spaghetti sauce to thicken the sauce. Just before serving I removed the chicken (which I had cut into strips) to a separate platter and sprinkled it with kalamata olives, toasted pine nuts and feta cheese. I served thin spaghetti and the sauce in separate bowls and let each person help himself. A resounding success. Really good.

Special Occasion Stuffed Crown Pork Roast

I used a 12 chop crown. Cooking time, I found, is much too long. And since the butcher placed the "panties" on the rib ends, the instructions didn't make a lot of sense. But it's a fairly inexpensive and impressive presentation and the stuffing is really good.

Au Gratin Potatoes

Easy dish when you're in a hurry. Reasonably good. I left out the green pepper, used a little extra onion and, in doubling the recipe (that turned out to be unnecessary--as written the recipe served 12 people comfortably) used 2 cans cream of celery, 1 can cream of mushroom and 1 can cream of potato.

Pepperidge Farm® Beef Wellington

As written, recipe would hardly feed 10 people satisfactority. I doubled it for 12 people, refrigerated seared beef overnight and added gorgonzola to cooked portobello mushrooms and onion. I forgot to egg the pastry before assembling the dish but it didn't seem to matter. The dish looks beautiful when it comes to the table but the meat, while very tender, is also very bland. Several people asked for horseradish. Although it was lovely it was too much work. I don't think I'd do it again.

Lots of ways to hide your mistakes (and I made a lot, even dropping the cake and rescuing it just before it hit the floor). Happily there was more than sufficient filling to "ice" cake. Clutch marks couldn't be seen. I added a sprig of holly with red berries. Very pretty. Guests all loved it. Four stars only because it's such a pain to assemble.

Yorkshire Pudding

All thumbs up. I made mine with butter instead of meat drippings to satisfy vegetarians in our midst. Very easy. Very good. I did heat butter to bubbling and I also used one and a half cups of flour. Great for Christmas and other holidays.

An unhappy surprise...kind of tasteless. I'm going back to my mother's tried and true nutmeg and cinnamon spices. I might even cut down the sugar and substitute honey crisp apples.
