Beer Braised Irish Stew and Colcannon

Prepared this exactly according to instructions. Very good. Husband and stepson raved! Used Guinness draught, not Guinness stout. Guinness draught is very smooth and not bitter in the least. It has a ping pong like ball in the can called a widget. It is supposed to be there so don't freak out.

Apologies to those who insist on cooking the recipe as is before rating. It is hard for someone who cooks a lot to do that! Five stars for the addition of sour cream and provolone - two things I have never done with baked ziti.

Chicken and Summer Squash

Great recipe. I made a chicken rub from salt, pepper, cumin, and ground ginger. I also added onions, two cloves of garlic, yellow bell pepper, and fresh mushrooms to the veggies. I sprinkled with dried basil in addition to salt and pepper. No problem with blandness!

Very good slow cooker recipe for BBQ Ribs. Watch it after a couple hours of cooking or it will end up pulled pork. Also don't skip the broiling step as it does make a difference.

Chicken Pot Pie IX

Wonderful recipe. Thank you so much. My little differences. After I cubed the chicken I sprinkled it with garlic salt and pepper and rubbed it into the chicken. I cubed two medium potatoes, cubed, and added that to the frozen vegetables. I left out the celery and celery salt. I boiled the chicken/vegetable mixture in chicken broth with added poultry seasoning (about a tablespoon) and a bay leaf. I brought it to a boil but only boiled it for five minutes so as not to overcook the potatoes. I love the onions as a base for the white sauce but added extra butter (about 1/2 stick total) before the flour. It just didn't look like enough butter for the amount of white sauce that I wanted. Used the exact amount of flour, two cups of the chicken broth that I preserved from the chicken/vegetable mixture. Used one cup of milk. Exact amount of sauce - perfect. Baked the bottom crust for five minutes before dumping the chicken/vegetable mixture on it. Baked at 375 for 30 minutes. My husband and son (age 17) raved. They loved it.

The Best Chicken Fried Steak

This was a big hit for my family. I followed the directions exactly and it was very, very tasty. My wife ended up making the best gravy out of the drippings as directed. Something about using buttermilk verses regular milk makes it very yummy.

Balsamic Marinated Chicken Breasts

This was very yummy. The breasts were suprisingly juicy and tender and very flavorful. My youngest son's girlfriend who doesn't eat chicken decided to try one and she ate the whole breast.

Chicken Pasta Primavera

Great recipe - if you use whole wheat spaghetti, the Weight Watchers points per serving are only 4! I also used all olive oil (no butter) to cook the chicken and I put the spices on the chicken as I cooked it.

Real Homemade Tamales

Navy Bean Soup I

Very delicious and seasoned well. My stepmom who is 89 loved it and everyone raves about her soup so for her to have liked it so much it truely was good. I did add a couple of small carrots though however. Other than that I was faithful to the recipe.

Slow Cooker Beef Roast

VERY Easy and super simple but it was delicious. I found the BBQ sauce and worcestershire sauce were a good combination and neither one overpowered the other. I made it over rice as suggested and made (haha boiled more like it!) fresh sweet corn on the cob, and it was a great compliment to the gravy from the bottom of the crock pot poured over rice. The roast was perfectly cooked. I was unsure what shpinky meant by "chopped" carrots and celery but I chopped them down to small bite sized peices about the size of half a penny. Enough so that they would still flow fairly easily out of the gravy boat.

Sandy's Casserole

From a man's point of view (I cooked this last night) this was / is a big hit. Very yummy and my picky 16 year old lanky teen ate a second helping. My wife loved it also and agrees that it's a keeper. Very easy to prepare and the macaroni was done to perfection. I used mild cheddar and 1 can of cream of mushroom and 1 can of cream of celery (I improvised) and a 10 oz can of stems and pieces mushrooms. Other than that I followed the recipe.
