Cannoli

Reviewed: Dec. 13, 2009
Oh my GOD. These were so good. They take some time, but are fun to make with friends. I think it would be hard to make these by your self. Everything blended well. I WILL BE MAKING THESE AGAIN! I added nutmeg and didn't add the citron. It turned out great. I also drizzled chocolate over them.. WOW, you wont be able to stop eating them… These are fancy and very impressing looking to serve to guests.

Spinach and Feta Pita Bake

I made this for my family and bf, they LOVED it. I added roasted eggplant because I had some left over from the night before. I also added some fresh mozzarella. Great side dish, could have been a main course, especially if you added some chicken.

Baked Coconut Chicken

Reviewed: Dec. 13, 2009
I made this for a fast dinner. I used regular milk and butter salt and pepper because I didn’t have coconut milk. I used cracker crumbs because I didn’t have bread crumbs. I mixed the coconut, ginger snaps and macadamia nuts (and a little bit of cinnamon sugar) in a food processor. (It made a great topping for gingerbread muffins if you have extra) I know I changed a lot of it but, it turned out great.
