Garlic Mashed Potatoes and Beef Bake

Like some others, I found this recipe way too gooey with two eggs. I added about a cup of Italian seasoned bread crumbs to soak up the egg. I also used 1 1/2 cups of fresh cremini mushrooms. I didn't have stew mix so I used a tablespoon of gravy mix. My burgers are delicious!

Gourmet Sweet Potato Classic

I used margarine instead of butter which may have been the reason I needed to add twice the flour called for to make the topping crumbly. I didn't put any sugar in the sweet potatoes and used 2% milk. My husband and I thought this dish was amazing.

No-Fuss Meat Loaf

I only had one egg to put in it. I used Stove Top Cornbread Stuffing and it tasted delicious. I put a couple acorn squash in the oven at the same time so I had a fast and easy meal prrepared in 20 minutes.

Broccoli Chicken Salad

I really enjoyed this recipe. I used bacon bits instead of bacon strips and rice vinegar instead of red wine vinegar. I will make this again.

Bean and Honey Burrito Casserole

My husband and I really enjoyed my version of this recipe. I am gluten intolerant so I used Ezequiel brand tortillas. I substituted brown rice for the yellow, Agave syrup for honey. I didn't have green peppers or garbanzo beans so I just doubled the red peppers and black beans. What a treat this was! I might try a little hot sauce in the honey mixture next time to give it some zip.

Indian Cauliflower

I like the flavor of this recipe but it did take a lot longer to cook than 30 minutes. I'm not sure why it is supposed to bake in the oven because the microwave is so much faster. Perhaps it's the texture but I'm not sure. The sauce was very tasty.

Summer Garden Pork Chops

I love this dish. It makes me look forward to eating vegetables, which is unusual for me. I had eggplant in the fridge so I cubed it and sauteed it with the other veggies. I didn't have cinnamon stick but I'm not sure I would like that in it anyway.

Pumpkin Pecan Pancakes

I loved these pancakes and I'm not a pancake lover. I think what made them so much better than regular pancakes, in my opinion, is that I knew I was eating something healthy that tasted great too. I added nutmeg and cinnamon.
