Turos Csusza (Pasta with Cottage Cheese)
And I've made this many times. Farmer's cheese is used in the original version, cottage cheese is a derivative of farmer's cheese. Simply put the cottage cheese in a towel and hang it for a few hours over your sink to drain away the fluid. Then add to the noodles as directed. This is too delicious to quibble about details. I do add some onion, and heat the stuff in the microwave. This is very simple food, which I dearly love.

Chef John's Beef Goulash
I have made Hungarian goulash for several years and have never seen sugar nor sweet vinegar added. I have added apple cider vinegar which helps tenderize the meat and adds some flavor. Neither have I ever added tomato paste, but I have used ripe tomatoes. So, it was OK, but I'll rely on my own recipe. I also add one or two or more Hungarian peppers, sliced or whole depending on who will partake of the stew/soup. I also use bacon fat reserved from breakfasts, and smoked Hungarian paprika.

Home Rice
A good basic recipe. I have made Ome Rice several times, and had it served in a few restaurants in Japan. It is really a leftover type dish. Some ideas to try: Use grated carrot and onion for quicker fry time; add small amount soy sauce with ketchup; use cold rice, warm up in pan with vegetables; try other vegies such as frozen peas, snow peas, cut green beans, green pepper diced. Add other cooked meats such as ground beef, chicken bits, pork roast bits, cooked shrimp.
