Ukrainian Red Borscht Soup

DELICIOUS! I doubled this recipe because I had lots of veggies on hand (thank god I used my huge stock pot). I omitted the sausage, used red cabbage (that's what I had in the fridge), and added 2 packages of chicken stock (the concentrated kind that's sort of a jelly texture). Served it with sour cream and fresh dill on top!

Fluffy Whole Wheat Biscuits

On a mission to make healthier meals, I decided to try whole wheat biscuits tonight. I was to lazy to roll them out and use a cookie cutter, so I rolled everything into a log and divided into 6 equal pieces. I rolled each piece into a rough circle and baked in a ceramic pie plate. They were fantastic! It takes longer to bake this way... after 12 minutes I reduced the temperature to 350 and checked them every few minutes until they were lightly browned. I think overall they were in the oven about 20 minutes. I will definitely be making these again!

Asian Salmon

This was fantastic! I used a rainbow trout fillet in place of the salmon, and reduced the sesame oil to 1 teaspoon. Make sure you chop the onion very fine so that it cooks through (unless you don't mind a bit of crunch). I served this with wild rice and steamed baby bok choy. I will definitely add this to my rotation!

Beth's Spicy Oatmeal Raisin Cookies

I will never use another oatmeal raisin recipe again! I personally found that 9 minutes was perfect for smaller cookies and 10 minutes was good for slightly larger cookies. Sometimes I increase the cinnamon and cloves, but these are delicious as written. They were a big hit with my husband and family! Thanks Beth!

Italian Sausage Soup

This soup is fantastic and freezes well. I added extra chicken broth, 1 can whole tomatoes and 1 can crushed tomatoes, frozen spinach instead of fresh, 1 cubed potato. I also used hot italian sausage to give it some kick. Delicious!

Light Oat Bread

Used 1 cup whole wheat flour and 2 cups all purpose. Added 2 tbsp of ground flax seed. Used butter instead of margarine. Excellent bread! Loved the texture and flavour (hubby loved it too!!)

Slow Cooker Beef Stew I

Excellent as is. I also add 1/2 pack of onion soup mix, a tsp of dried thyme, mushrooms, and frozen peas. Perfect with warm crusty bread. The most recent time I made this, I quadrupled the recipe and froze 3 portions in large freezer bags and made the 4th in the slow cooker. For the frozen meals, I just marked how long to cook on the bag before filling. When I wanted to make the stew, I would thaw it in the fridge overnight so that the next day I could just pop it in the slow cooker.

The Best Lemon Bars

These are absolutely incredible! I followed the recipe as written, adding the following: a pinch of salt to the crust, 2/3 cup of bottled lemon juice, parchment paper lined pan, powdered sugar on top. I was a little worried that the bottled lemon juice wouldn't work as well, but it worked like a charm and saved me a trip to the store. I will be making these again and again!

I love this recipe! As most other reviewers have said, use halved red grapes in place of raisins and use about double the amount called for. If you want leftovers, double the recipe. I get asked for the recipe every time I make this!

My Best Clam Chowder

I am eating and reviewing at the same time. This recipe is AMAZING!! I usually prefer to try a recipe as written, but there were a few modifications that I knew would suit my family's taste. - Cook 6 strips of bacon, remove bacon, saute veggies in bacon grease until soft and then add the clam juice (I add a couple cloves of garlic minced to the veggies) - After adding clam juice, add fresh or dried thyme and extra chicken broth if necessary - Crumble bacon into soup with clams I chose to omit the red wine vinegar this time. AMAZING!!! I will make this one again

Awesome! Used apple sauce instead of oil, added 1/2 cup of ground flaxseed, cut sugar to just under 1/2 cup (could have reduced even more). Will be making this again and again!

Caramel Popcorn

I can't believe I haven't rated this one yet! This recipe is great! I made it at Christmas to give to friends and family and everyone raved + asked me to make more. I sprayed a roasting pan with cooking spray + that made it very easy. Highly recommended!

Creamy Rice Pudding

Awesome rice pudding! I was craving rice pudding and decided to try this recipe even though my husband told me he doesn't like rice pudding. Well go figure, he had a taste and loved it! I will be making this again.
