Recently I posted a complaint on my Facebook wall. I'd like to share it and the relevant comments plus some of my own.
Americans are getting married later and later in life. Americans are also living longer. Why is it then that all the recipes I find are 4-8 servings? I don't want to eat the same thing for the next 4-8 meals. Most dishes will spoil before I could eat all
of that and most things don't freeze well. It just doesn't make much sense to me.

Doug The limiting factor are the portions you can actually purchase in. It's hard to get 1 or 2 of anything.
Me What Doug said. As much as I try, I still wind up with a lot of extra ingredients spoiling.
Kathy That's what the freezer is for. Portioning larger amounts. It's not just for making ice!
Robin You seen her freezer? It's like a deep-freeze-a-palooza. If you needed to hide a body in there, I'm pretty sure you could.
And then it digressed from there...
So, I'm right back where I started. I freeze a lot of stuff and I try to buy small portions when I can. But that's not always plausible. I freeze the left overs as well as the ingredients I used. Still I throw away food. There are simple solutions, like
eating pop tarts or frozen dinners constantly, but personally, I like knowing what is in my food.
I like AllRecipes, because it gives me the ability to scale larger recipes, and that is the main reason I use this site so much. However, not everything scales all that well.
