Recently I posted a complaint on my Facebook wall. I'd like to share it and the relevant comments plus some of my own.

Americans are getting married later and later in life. Americans are also living longer. Why is it then that all the recipes I find are 4-8 servings? I don't want to eat the same thing for the next 4-8 meals. Most dishes will spoil before I could eat all of that and most things don't freeze well. It just doesn't make much sense to me.

Now the comments:

Doug The limiting factor are the portions you can actually purchase in. It's hard to get 1 or 2 of anything.

Me What Doug said. As much as I try, I still wind up with a lot of extra ingredients spoiling.

Kathy That's what the freezer is for. Portioning larger amounts. It's not just for making ice!

Robin You seen her freezer? It's like a deep-freeze-a-palooza. If you needed to hide a body in there, I'm pretty sure you could.

And then it digressed from there...

So, I'm right back where I started.  I freeze a lot of stuff and I try to buy small portions when I can.  But that's not always plausible.  I freeze the left overs as well as the ingredients I used.  Still I throw away food.  There are simple solutions, like eating pop tarts or frozen dinners constantly, but personally, I like knowing what is in my food.

I like AllRecipes, because it gives me the ability to scale larger recipes, and that is the main reason I use this site so much.  However, not everything scales all that well.

Any suggestions?

One suggestion would be meal swapping with some of your other friends in a similar boat, though finding others with the time and interest to do this might be difficult. You might also look for "next day" type recipes where your leftovers are turned into something else - Rachael Ray does this. Other things to consider are that most dinner prep services (Dream Dinners or whatever is in your area) normally offer the option to make 1/2 servings which would be more to your serving size. Also, perhaps there is an elderly person or persons who live near you who could benefit from your extra portions - it wouldn't save you any money, but you would feel better giving away your food rather than throwing it away. Finally, Cuisine at Home Magazine and Taste of Home Magazine both offer a "Cooking for 2" version depending on your personal tastes. Cuisine has more sophisticated dishes and flavors, and does a really good job making more complicated cooking tasks accessible. Taste of Home has good middle of the road recipes - solid and classic.

American are not living longer and longer...I have old books of history from KY and just there alone the there were a lot of people that were living in their late 90's with no medications and no seriouse illnesses. My great grandmother, great great grandmother, great aunts, great uncles lived to their late 90's and early 100's as did many of their friends. The age of life started going down with more doc visits and medication perscribed. My father is 68 years old and on no meds and in very good health and is often mistaken for 50 years of age at the oldest. His reason is he has been to one docotor in 35 years and goes to the dentist regularly. The books I have where the citizens, mayors, townspeople were living to that age were one out of every five and they were not related.

But do as I did when I was single cut the recipes in half or freeze part of the meals and then you have lunches to take to work without spending extra money or sometimes I took a meal to an elderly lady that lived a few doors down from me and she loved it and greatly appreicated it since she did not have a lot of money and really had to strecth her dollar.

Back in my single days I would eat out but I noticed a lot of people would eat quite healthy like fresh fruits and veggies with granola and dips, you could often buy these in smaller portions and I've found things are usually for singles like the pouches of herbed rice, soups like chardonay are delicious, I find now that I'm in a larger family situation things are made in portions that are to small, I have the opposite problem.

My husband and I had a season of living in a company dorm room with very basically a hot plate, frying pan and toaster oven. We would shop daily (from grocery that was a nice walk from the dorm) and lived off pitas filled with chopped cabbage, carrot, etc. and whatever bit of meat we chose to throw in for that evening's protein fix. Between the walking and the fresh veggies, the bonus was (for me) needed weight loss. ;o)

I find the same problem. I find I feel guilty buying some things in small quantities as that sometimes proves to be more expensive than bulk purchases. I don't have room to store a lot of stuff, so my kitchen looks like a food bank sometimes. My husband and I do get a little sick of some foods after the fourth meal, but with some of the stuff we have going on we're appreciative of the time it saves to heat up leftovers. Not sure I can give advice to help you. There have been some good suggestions already. I think I may start sharing with my daughter's in-law's family and my husband's ex-wife. That will add a little variety.

For the past 3 years I have either been cooking for one or two most days out of the year. I find that its not all that hard to cook this way at all. I usually have left overs but they usually are only good for a meal or two at most. I like to cook a meal one night and reinvent it the next night. For example a roast one night, and shredded beef enchiladas the next (which freeze very well). I find a minimalist approach is easiest way to cook for one/two.
