Chicken Jalfrezi

My family loves this recipe! Since I made it the first time, it's become a frequent request...from my 8-YEAR-OLD! I have been getting beautiful tomatoes from my CSA share, so using those instead of canned (I don't bother peeling). Last time I tried adding diced potatoes, so it becomes more of a one-pot stew - the potatoes thicken up the sauce nicely. But the family enjoys it the original way best.

Coconut Curry Black Bean Burgers - Thai Style!

The main problem I had with this recipe is, where's the tofu in the instructions? I added it with the bread crumbs and veggie burger crumbles, but that made more than a dozen patties! I'm guessing it was supposed to be either the tofu OR the crumbles, not both. If I had known that going in, I'm sure the flavor would have been more intense. As it was, these were fine, but nothing exciting.

Cheater Pot Pie

I've made this recipe as-is and it turned out very well. But tonight I tried something a little different. I try to make at least one meal with fish or seafood each week. So, I substituted fish for the chicken and condensed clam chowder for the cream of chicken. The fish was Mahi Mahi, and I cut it into piece and sauteed it quickly in the saucepan before adding the vegetables. Also, I found 1.5 tablespoons of melted butter to be quite sufficient. It turned out really well! So Cheater Pot Pie can easily become Fish Pot Pie.
