Spinach and Mushroom Quesadillas

I love spinach in Mexican food and loved this one as well. It is a simple quick recipe yet tastes great. These quesadillas are better with some sides (Salsa, Guacamole, Refried beans etc - all found on this website) Thanks very much for sharing this yummy recipe!

Best Guacamole

I followed the advice from the comments, added cilantro and lime, removed olive oil and this came out pretty well. However, I found an even better recipe (quite similar but better) posted by Bob Cody titled "Guacamole" - would recommend you try that one as well. That said, this is also a good one with the changes suggested by the users. Thanks for sharing.

Guacamole

AWESOME!! This is the best guacamole I ever had in my life. Better than the best restaurants. This is so good and fresh tasting, it makes the whole Mexican meal so much better. Would highly recommend this. Do try it just the way it is recommended. You will love it!! Thanks for sharing!!

Fresh Tomato Salsa

Followed the recipe exactly - came out yummmm. The chilli was perhaps one too much, so I increased all ingredients a little :) Also added a very little bit of sugar for a sweetish tinge which I think worked well. Very fresh tasting and very good. Thanks a lot for sharing.

Vegetarian Refried Beans

OMIGOD! Awesome!! These are toooo good. I can't believe how a little tomato and garlic can give such a wonderful flavour. Better than my favourite restaurant. I followed the recipe exactly - just reduced the oil quantity a little. Thanks a lot for sharing this!

Chocolate Ganache

Wow - this is great. Will make any simple (chocolate) cake so rich, chocolatey and delicious. And so easy! You can't go wrong. Highly recommended. Be careful with the quantity though. Turns out if you follow the recipe, you end up with quite a bit!

Bean Quesadillas

I think this recipe is just great and the quesadillas were totally yummmmm. I added some salt and 2 tsps of "Mexican seasoning" from my supermarket which gave it a lovely lovely flavour. Highly recommended. Thanks for sharing!

Mexican Rice II

The rice came out wonderful. I added a couple of tsps of "Mexican seasoning" which had garlic, cumin and many other spices and that gave it a wonderful flavour. I also used fresh tomato pureed in the food processor instead of the paste. Would recommend checking for dryness after 15-20 mins and add a bit more water if required. Mine needed a bit. Thanks a lot for sharing this absolutely awesome and simple recipe.

California Grilled Veggie Sandwich

These sandwiches came out quite well. Was quick and easy. I didn't find them awesome (may be I got my hopes too high after reading all reviews!). But given the ease of making and no special ingredients required, I think these were worth the (very little) effort. Will make again. Thanks a lot for sharing!

Chocolate Chip Banana Bread II

AWESOME!! This was my first baking experience ever and this turned out unbelievably lovely. Is very moist and subtly sweet. Really really yummmm.. Thanks so much for sharing this wonderful recipe. Everyone absolutely loved it. Would advise against reducing the sugar amount. I used light butter instead of shortening. I considered using extra banana but thought I'd stick to the original recipe this time. Feel that an extra banana could have made it better. Will defi make again and again.
