Bubba's Jambalaya

My family enjoyed it. Very flavorful. I just returned from New Orleans and had some there...and mine tasted pretty close. I kept the chicken and shrimp (regular or jumbo instead of salad shrimp) but used turkey bacon , turkey ham and chicken andouille instead of the pork. Used all chicken stock/broth. Added 2 tsps of worcestershire sauce and fresh garlic. The seasonings were fine (I added a tinge more cajun seasoning).

Grandma B's Bean Soup

Cooked for 12 hours (but not necessary). Came out like stew: thick and hearty. Used cooked/shredded smoked turkey and chopped turkey bacon instead of pork. Added about half chicken broth/water. Added fresh minced garlic. Seasoned w/ salt, pepper, cumin, cinnamon, ginger powder to taste. Be careful with cinnamon and ginger. Want smooth and savory, not bitter or spicy.

Vegan Agave Cornbread Muffins

Sorry, but mine are not vegan. Used evaporated milk/slightly diluted with water (still 1/2 cup). Then: Pumpkin puree (from can); Maple syrup; Regular white whole wheat flour (sifted, if that did anything). Everything else the same. Came out very moist. May have to bake a few extra minutes.

Glazed Lemon Supreme Pound Cake

I made this for my cousin's birthday because lemon cake is her favorite. She enjoyed it (as did others) and thought it tasted just as good (or better) as store bought cake. I certainly hope so! I liked it as well, but I do like denser pound cakes. I might try adding more flour next time for increased density.

Japanese Chicken Wings

My family thoroughly enjoyed them. I changed it a bit: I did not fry, but oil, season (salt, pepper, dry mustard, garlic powder)and egg white (mix up the chicken in a bowl to coat and season)lightly flour and bake in oven for about 20 mins to brown and broil for last 15-20 mins (or however you desire for crispiness and brownness). Once crispy, baste w/ sauce until chicken is done. For sauce, double it. Use half of sugar. Last batch of sauce when basting, add a little cornstarch/water mix to thicken.

Buttermilk Pancakes II

I added blueberries and a little vanilla. I also let the batter sit for about 30-45 minutes. My family and guests enjoyed them and my brother asked for the recipe.

Grilled Mediterranean Vegetable Sandwich

Good stuff :) Replaced: Roasted red peppers in a jar for fresh peppers I added: asparagus sliced red onions sprinkled salt, pepper, dried herbs (thyme, rosemary and basil) feta cheese Some other changes: I sprinkled the herbs, salt and pepper on my veggies (except the mushrooms) and roasted all of them. I let them sit and cool for a while. I halved the bread lengthwise and lightly toasted it in oven. Then after putting on all of the veggies and the cheese, I nuked it in the microwave for about 15-30 seconds (not too much). Everyone enjoyed the sandwich--my father and brother had seconds. I think it will taste even better the next day (I made two) and I will try pesto next time instead of the mayo.

Sea Bass Cuban Style

I used flounder instead. I served it for my mother and family on Mother's Day. My brother's friend enjoyed it and he doesn't usually like olives.
