Pumpkin Bread IV

Mmmmm, I took the advice of another user and doubled the amount of cinnamon, cloves, and nutmeg used, as well as using half oil/half unsweetened applesauce. I always fold in chocolate chips in pumpkin bread. This recipe was GREAT. I actually used a pie pumpkin, cooked it in the microwave for 9min before pureeing since I was out of canned pumpkin. Fabulously moist and TASTY result. Would've been great with canned pumpkin, as well!

Chocolate Chip Banana Muffins

This recipe was SUPER easy. I ended up omitting chocolate chips as I was out, and using Dannon Light 'n Fit Vanilla yogurt - the result was perfectly moist, bursting with flavor. I would make this recipe again in a heartbeat!

Urban Legend Chocolate Chip Cookies

I followed the advice of others and decreased sugar to 3/4c. each, increased baking soda by 1/2tsp, and baking powder by 1/4tsp because I prefer a little puffier cookie. Could not be more pleased with the result! I also sprinkled some cinnamon right on in these. The balance of flavors is wonderful and even without grinding the oats these are the perfect texture - not overly hard or chewy after baking exactly 7min, letting sit for 1. Wouldn't hesitate to make this my go-to chocolate chip oatmeal recipe!

Mrs. Sigg's Snickerdoodles

Followed others' advice and increased sugar to 3T + cinnamon to 3.5tsp...also was sure to hand mix the recipe. Cookies turned out wonderful after baking for exactly 8min and removing immediately from cookie sheet. I also stuck the rolled dough in the fridge/freezer for a couple minutes before placing in the oven to help keep them from spreading. Fabulous flavor, easy recipe!

Ukrainian Red Borscht Soup

Overall a good recipe. I followed the advice of another reviewer and boiled my beets for ~1hr before dicing, and then saved the water to use in the soup. I accidentally added too much water, beware because it is easy to dilute the flavor. Didn't need sugar at all! And after adding LOTS of dill and letting the soup sit in the fridge overnight, the flavor the next day was even better!

Chewy Chocolate Chip Oatmeal Cookies

I followed the advice of other reviewers and increased the flour by 1/2 cup, baking soda by a 1/2T, and decreased the salt to 1/2tsp. Also made sure to cream butter, sugar, and eggs together until fluffy before hand-stirring dry ingredients in. After baking for exactly 12 min I removed cookies immediately from baking sheet...waiting for 5 min would've left them overdone. Also, I chilled the dough in the fridge in between filling baking sheets, this seemed to help keep from spreading. Easy recipe with a great balanced flavor and good texture!

Gourmet Mushroom Risotto

This recipe is awesome! It sounds time-consuming, and it's definitely an investment of your time, but it's not too bad and it's completely worth it. Warming the broth is *key* to getting it to absorb correctly, and I don't think I use a pound of mushrooms each - sometimes I substitute Crimini for Portobello. Also, I like to add fresh spinach at the very end of the recipe when adding mushrooms back in - adds color and little extra flavor. All together a great recipe!

Fish Tacos

This was a great, fairly easy recipe. The fish was tasty and everyone at dinner loved it. Instead of frying I marinated the fish in lime juice, fresh jalapeno, salt, pepper, and a little bit of olive oil then grilled - we didn't have a quart of oil. White sauce was a hit with everyone and I made a recipe of Heather's Black Bean Corn...salsa (found on allrecipes.com) to accompany the tacos. Altogether a great recipe!

Heather's Cilantro, Black Bean, and Corn Salsa

This salsa was awesome! Most corn salsa's I've ever had were very bland - not so with this recipe. I added a little garlic salt but this salsa would've been awesome either way! I love lime so the next time I might up the lime juice a tad, but this recipe is great regardless. We finished an entire recipe the first night between four of us girls. I made it as an addition to fish tacos; everyone loved it.

Super-Delicious Zuppa Toscana

As previous reviewers (and my own restaurant experiences) dictated, I also switched out the spinach for kale, using one bunch, as well as using hot Italian sausage in lieu of mild & red pepper flakes. This recipe turned out WONDERFUL and was super easy to make. I will definitely be making this again!

Tortilla Soup II

Good recipe and gets extra stars for being so easy! I used a rotisserie chicken for this recipe, and like previous users, found it to be a little too much (I thought it'd be ok since it was on the smaller side). I needed a little more broth to compensate but was out so used a little Dos Equis lager for extra liquid and it turned out great! I also added a can of drained white and yellow corn and upped the cilantro to 2/3-1/2 of a small bunch. Will definitely make this again!
