Carrot Cake III

Yeah! I found the PERFECT carrot cake recipe! My husband and kids made this for my birthday and it was fabulous, to put it mildly! They used the changes/additions suggested by the top reviewer of this recipe "gneebeanie." 40 minutes in our oven was all that was needed. LOVED it!!!

Lemon Yogurt Muffins

Super yummy & super easy-my kind of recipe! I will be making more of these! My family loved them! 20 minutes was perfect in my oven. Would be great with blueberries, cranberries or raspberries too.

Lemon Cream Pasta with Chicken

This was good. My family of 6 (4 children) liked it, so I will make it again. I used Land O Lakes Fat Free Half & Half instead of cream. We put a little parmesan on top too. Peas and/or tomatoes would be nice additions in the future.

Sweet and Sour Meatballs I

Sorry, I did not like how the meatballs were swimming in fat after cooking. This made me throw away the sauce. This is unfortunate because it was probably good. I will try this recipe again by first baking the meatballs to get rid of the unecessary grease and then using the crockpot with the sauce.

American Lasagna

I used 1/2 lb. sausage and 1 lb. ground beef. I added 1/4 cup cream cheese to the ricotta mixture and 1/2 cup leftover spaghetti sauce to the sauce mixture. A lot of reviewers suggested 1.5 hours cooking time; however, I made the mistake of setting it at this time and not checking it. This cooking time was too long in my oven and the result was burnt edges and slightly burnt top. I will check around 1 hour next time and maybe throw in some pepperoni. Yummy recipe!

Iced Pumpkin Cookies

For taste, I give this cookie 5 stars-so yummy! However, I was looking for a pumpkin cookie with not-so-sticky batter. These were sticky-too sticky to form truly round cookie balls. I'll save this recipe for my family, but won't gift them.

German Chocolate Fudge

My 10 year-old daughter made this and says: I give this four and a half stars!!! We used regular semisweet chocolate, no pecans; but added crushed candy cane on top. DELICIOUS!

Pumpkin Pie Bars by EAGLE BRAND®

Pretty good. It is similar to pumpkin pie. I used pumpkin pie spice instead of allspice and threw in some extra cinammon. Definitely spray the pan.

Old-Fashioned Soft Pumpkin Cookies

The only thing that I didn't like about this cookie was that it was very sticky to work with and therefore, not the prettiest presentation. But, it was yummy and my family loved it! I added 1 1/2t. pumpkin spice and 1 1/2t. cinammon. I also used ready-made icing for on top.

Apple Pumpkin Muffins

Yummy!!! Best when adding half oil/half applesauce, 1 3/4 c. sugar, heaping tablespoon pumpkin pie spice, dash of cinnamon, almost a full small can of pumpkin, and 1 large chopped Granny Smith Apple. I made a little more of the topping too. The topping is a little crumbly, but a nice change.

Irish Tea Cake

My daughter made this for a multicultural day for Ireland. This is now a keeper for St. Patty's Day! (We may even add a few green food coloring drops for a festive look!) The whole family and classmates loved it! Beat the butter and sugar for awhile before adding the flour. In our oven, 30 minutes was a perfect bake time. Simple, yet delicious!

Soft Zucchini Spice Cookies

These were tasty, especially with the orange zest. I added 1/4 c. more flour for high altitude. The only thing I didn't like was the wet, sticky dough-hard to form into perfect balls, which I like to do with my cookies. The kids and a neighbor really enjoyed them!

Mary Anne's Moist and Nutty Carrot Loaf

This turned out great! I added 1/2 t. powdered ginger and 1 more heaping t. cinnamon. I slightly drained the pineapple by draining most the liquid and not squeezing the crushed pineapple. Healthier substitutions: 1 c. applesauce (no oil), use half white and half brown sugar. 350 Degrees for 45 min. worked perfectly!

Good Old Fashioned Pancakes

Taste was great; however, I didn't like how thick the batter and pancakes were. It was hard to form into traditional circles. But, my kids enjoyed them! Be sure to double the recipe if cooking for more than ~3.

Easy Cheesy Chicken I

Any recipe that has all 4 kids wanting seconds definitely gets 5 stars! I added 1 pkg. Italian dressing mix and put all over bow tie pasta (cooked seperately). The pasta was ok, but I think egg noodles will be a bit better next time I make it.

Puppy Chow I

10 Stars! Fabulous!!! Easy! I added 1/2 cup more peanut butter. I made this for a daughter's b-day party. It was a pet theme. I didn't have a large bag, so I placed the coated cereal on a cookie sheet and sprinkled on one cup of powdered sugar at a time. Then I mixed it with my hands. (A spoon was too hard.) Messy hands, but got the job done :)!

Sparkling Punch

Yummy! I served this at a Bunco Night that I hosted and everyone liked it! I used equal amounts of ginger ale & sparkling soda water, 1 can of pink lemonade, one orange cut up, and 1 small jar of marachino cherries next time I'll add the juice too). Extra sugar and lemons would have been too much. After doubling, we had some left over the next morning and my kids loved it. Surprisingly, there was still some carbonation the next day. So, feel free to make this an hour or two ahead of time (without the ice, of course).
