Slow Cooker Texas Pulled Pork

Cooked this while visiting my family in England - they LOVED it. Mum has since added this to her pot-luck repertoire and it was a hit with all her UK her friends too. Omitted onion second time I made it, and it was still superb - didn't miss it. Have also used this recipe with a beef joint and it was delicious - a great, versatile sauce.

Jumbo Fluffy Walnut Apple Muffins

Really light and fluffy - great way to eat up windfall apples. Have made several times over the past months. I replaced the nuts with a generous 1/2 cup of raisins, and used a generous 2 cups of mixed eating/cooking apple varieties for a good flavor. Tried without the cinnamon crumble once, but they weren't half as yummy... however I do add a small handful of oats to the crumble topping now.

Tomato Spinach and Bean Burrito

Superb healthy dinner. I didn't add the extra 1/4 cup of water, and added a dash of cornflour at the end to get a thicker saucier result. I used 2tsp chilli flakes instead of chilli powder. Really good with sliced avocado & sour cream wrapped in tortillas; also good as a "dip" for tortilla chips, and fabulous with rice.

White Chili with Ground Turkey

A really tasty, really easy dish that was very rapidly demolished in our house! (Serves 4 hungry adults) Couldn't get canellini beans so substituted 2 cans Northern beans +1 can pintos; as suggested I mashed one tin with a fork instead of pureeing. Also instead of cayenne I added some McCormicks smoked chipotle pepper. I used only 2cups broth for a thicker sauce, and added 1cup shredded Colby-jack cheese. Served in bowls with self-serve bowls of plain tortilla chips & more shredded cheese, cayenne and black pepper. Would be great with cornbread too. Yummy! Thank you!

Classic Bran Muffins

Make regularly - great for packed lunches / breakfast on the run. I substitue applesauce for the oil, reduced the sugar slightly, and use half raisins / half golden raisins, or sometimes dried cranberries. Keep really well up to 3 days in a tupperware tub.

Asparagus Chicken Fajitas

Fabulous recipe - the asparagus is so different. I followed others' advice and used the "super fajita marinade" for 8-12hr; addded whole red and yellow bell pepper, halved and sliced onion, cut asparagus spears in half, and omitted sweetcorn. Served filling in a big dish, with tortillas, sour cream, salsa and iceberg on the side for everyone to build their own. Big hit with all, even the in-laws! (great for those doing Atkins - use carb-free tortillas)
