Oriental Cold Noodle Salad

OMG - this was really good. My soba noodle instructions were to boil for 5min and then rinse with cold water. I made sure to use a good brand of Japanese rice vinegar (I have used store brand rice vinegar and have been disappointed in the past). This was a great recipe! Thanks for sharing.

Cinnamon Sugar Tortilla Delight

I like the idea and taste of this recipe. Unfortunately, I found the texture a bit "gummy" done this way (microwaving). I think I will try baking in the toaster oven briefly instead of using the microwave. Thanks for sharing!

Spinach and Pine Nuts

Very good. A nice way to use up lots of spinach fast. We served this as a side with lasagne, and sprinkled a bit of romano and parmesan on top. Thanks for sharing a simple and tasty recipe!

Mocha Chocolate Chip Banana Muffins

This is an amazing recipe. My bananas must've been small as my batter was a bit dry, so I had to add 1/4 cup of milk for it to come together (didn't have a 4th banana to mash up). I will definitely make it again! Thanks so much for sharing!!!

Barb's Pumpkin Chocolate Chip Muffins

Both my husband and I agree these are awesome tasting muffins! I substituted half the amount of sugar with the appropriate amount of Splenda (no matter what the makers of Splenda say, it doesn't always work). My muffin tops looked pretty ugly unlike others' photos, and I suspect it's due to the Splenda. My husband didn't care what they looked like and said they were the best! Thanks for sharing such a great recipe!

Butter Chickpea Curry

This is an amazing recipe. I saved time (and eliminated a pot to wash) by cubing the raw potato and microwaving them with a little bit of water for 7 minutes, while preparing the rest of the recipe. I will definitely make this recipe again! I'm glad we had leftovers for me to take for lunch, as my coworkers ooo'd and ahh'd at the smell of my lunch (some tasted it), and I printed the recipe to share with 5. Thanks so much for a great, easy recipe!

These were a huge hit at work! The only change I made was substituting the spices with equal amount of pumpkin spice, and using about 8 Tbsp of water instead of 2 Tbsp to hold better. Absolutely delicious; can't wait to make it again!

Oatmeal Date Bars

This was awesome! I didn't add any sugar to the dates (I forgot), and it turned out fine (sweet enough as it is). The next time, I will probably try to reduce the brown sugar to 3/4 or 1/2 cup and see if I can reduce some of the calories, so that I don't have to feel so guilty that half the pan got eaten the first day. This was a really good recipe!

Salmon with Pineapple Tomato Salsa

This dish was fantastic. My husband really enjoyed it. I only needed to bake my salmon for 10min. As well, I added 1/4 cup of cilantro in the salsa. I will definitely make this again.
