Pacific Cuban Black Beans and Rice

Will definitely make again. I didn't have chorizo on hand so threw in some bacon, fresh cilantro and chili powder as a substitute. Was perfect with grilled pork chops.

Pork Chops with Raspberry Sauce

Meets my criteria - quick, easy and good. Made a few tweaks out of necessity and one out of preference: I put the herbs, salt and pepper in the butter instead of rubbing the meat as I don't want to take the time to crush the herbs small enough that the mixture doesn't leave chunks of green on the meat. As my pantry is low, I substituted white wine for the vinegar, grapeseed oil for olive and a combination of raspberry and strawberry jelly adjusted to taste. Pork tasted good plain but better with sauce.

French Toast Casserole

Have made this many times now in a variety of ways and it is always good. White bread, wheat bread, old whole grain bagels you want out of the freezer -- it all works. I was out of sugar this time so threw in some honey. Kids didn't notice and I like that it was not as sweet. We don't buy margarine so sub butter each time. Super fast and easy to make.

Red Pepper Cream Sauce

I was in a hurry and distracted by the kids when I made this so didn't follow the directions exactly. I threw all the ingredients in the pan and boiled/simmered. Substitutions & additions: multi colored peppers, milk & butter instead of cream, oven roasted garlic and asparagus, steamed broccoli and peas. Served over cheese tortellini. Tasty, fast and easy.

Citrus-Basil Vinaigrette

Recipe has good ingredient combo but proportions are off. Way too oily and no tang as written. Added a lot more vinegar (balsamic) and a bit more honey. Absolutely lovely after chilling overnight. Next time I will start with half the oil and add as needed. Served with romaine with gorgonzola, red grapes and pistachios.

Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)

It is still simmering but love it already. Have to walk away to stop sampling. Made some subs based on what I had. First, I used leftover pork that had been rubbed and slow cooked. Didn't have fresh tomatillos so used store bought sauce. Same with Jalpaenos - used Salsa Verde. Upped all the spices a bit. Will definitely add it to the rotation.

Slow Cooker Beef Barbacoa

We really enjoyed this. Were worried that chili powder might be too much but really worked. Had it both on tortillas and on a salad. Even if it isn't authentic, it is good.

Chicken Pineapple Fajitas

The grilled veges were amazing. Didn't have red onion so used sweet onions. We will make the veges again, adding portabella, etc. and do meatless wraps. The white sauce was good. I didn't have avocado so, unfortunately, I had to skip that sauce. The chicken was ok.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Made it as written, very good. Next time might try Thai Chili Paste instead of hot sauce. All three kids (7 yrs, 3 yrs and 1 yr) all liked the rub. Only the 1 yr old liked the glaze.
