Blueberry Muffins I

Perfect, old fashioned muffins! I am gobbling them down as we speak, with a mug of hot tea! I use spelt - no problem! Mixed frozen berries - still fab! I even finished them the way we did in 'home ec' (does anybody know what that means? ;) ) once baked, I dipped them in melted butter, than granulated sugar. MMmmmmm!

Chicken Diane Style

DUDE!!!! I made this with carrots and cream, added some garlic - just out of the ingredients you asked for - wanted to lick the bowls clean!!! I'm gonna make this for the family meal on Saturday (The Big Deal Meal!!!) You rock, sister!!!!

World's Best Lasagna

Doubled the recipes, halved the salt, added 2 packs chopped spinach to the ricotta and edam to the mozzarella. Still wasn't enough for leftovers;it was gone!!!

Spicy Lentil Dip

Noni!!!I was looking for a recipe just like this one, and am I ever glad I found it!I used Umbrian brown lentils and olive oil,and, in addition to your recipe,added: 1 tsp toasted coriander seeds,half a cube veggie bouillion,Hungarian hot paprika,and cooked the lentils with a bay leaf.I used lots of the cooking stock to thin the spread, as it was plenty thick. Unbelievably good, I had it with my lentil soup and homemade buckewheat sourdough bread...sneaking back to get more sourdough and dip!!!It makes a fantastic sandwich filling! I will be making this as a staple in my fridge from this moment on.

Cheesy Polenta

While I did alter it somewhat to meet our dietary needs, YUM!!! I used 1/2 Yu rice milk, 1/2 soy cup creamy soy = milk.I reduced the olive oil margarine to 2 tablespoons. Also, I added a bit more aged cheddar, and 1/4 c. chopped pickled jalapenos. I also used perhaps a teaspoon more corn meal, and I cooked it a bit longer...I am letting it cool in a shallow loaf pan, and depending on the consistancy, I will either broil it after brushing it with melted butter, or cut it into squares, and fry till crisp on both sides...we're having it with vegetarian chili, tonight...but I already snuck at taste, and...YUM!!! Thank you!

Pineapple Sunshine Muffins

I changed this recipe to meet our dietary needs, and it was awesome! I used kamut and Spelt flours in equal portions to replace the flour, 1 c unpacked brown sugar, 1/4 lite mayonnaise, a splash of oil, 1 tsp. cinnamon, pumpkin seeds, 1 mashed ripe banana, omitted the butter, white sugar,eggs, and added 2 tsp cocoa. Then I realized my muffin tin was gone! So I baked it in a 9x13 @350 for just under 20 minutes, or just till the top was not spongey anymore. I cut it into 8 portions, for a complete breakfast muffin cake, and we have to disciplen ourselves to not eat too much! Thanks for the recipe!!!
