Cake Mixes from Scratch and Variations

As has been suggested previously, use oil instead of shortening and this comes out great. Also use the pineapple juice if making the upside down pineapple cake. Yum!

Holiday Chicken Salad

I loved this!! My husband was not keen on it, but that is strictly because of what he likes and dislikes... great chicken salad for sandwiches... especially yummy on a croissant.

Seven Layer Taco Dip

Yum!! I followed ideas from others and added Rotel tomatoes in place of the green bell pepper and fresh tomato. This is addictive and delicious!

Delicious Peanut Butter Cookies

Very good! I did follow suggestions by others and Increased the Peanut Butter, and used 1/4 Cup shortening and 1/4 Cup butter instead of just the shortening. I also sprinkled sugar over the top of the cookies. DELICIOUS!!

Lentil Soup

Very good!! I followed others feedback.. added 28 oz can crushed tomatoes, doubled the spices and added 2 potatoes. I also sprinkled parmesan cheese over the soup when done. Yummy!! Thank you for a great base recipe that stands on it's own, and can be modified to individual tastes and preferences! A Keeper. This recipe does make a very large batch. :)

Chili Chicken Stew

Yum! I modified the recipe (only because I did not have green bell pepper on hand) Exchanged a red pepper for the green and a red onion. This is a great soup / chili, whatever you want to call it! I did follow suggestions from a few others and added pasta to the dish as well as shredded pepper jack cheese over the top of the soup when finished. Very good!! A keeper. Thank you :)

Tuscan Style Bean Soup

All I can say is Yum! This dish has a very pleasing presentation and is so good. Not to mention it is on the healthier side of eating! Great recipe. A keeper that I will be making over and over. As someone else mentioned, this is a great lunch option for my busy schedule. I freeze small containers worth and take with me to reheat. Excellent.

Slow Cooker Veggie-Beef Soup with Okra

As others have noted, use chicken, beef broth, etc. to add more liquid or you will not have enough. This is an absolute keeper! It is good with or without Parmesan cheese sprinkled over the top. I also made it on the stove top in no time at all.

Herbed Potato Soup

My Husband and I love homemade soups and this is one is filling, flavorful. A definite comfort food perfect for this time of year. Add the celery as others have suggested, it adds just a bit more flavoring. Very delicious.
