Southwest Style Creamy Corn Chowder

Sorry, but we did NOT like this chowder; sugar in a corn chowder? I had my doubts as I read the recipe, but I never mess with a recipe the first go-round. It was TOO sweet; actually I don't think it needs ANY sugar. I gave this recipe two stars because of its potential. Other than it being sweet, it has great flavors, and love the ease of the crockpot. Will try again WITHOUT the sugar!

Dark Chocolate Brownies

This brownie could be so wonderful, but I was very disappointed in the cook time . . . after 40 minutes they were totally raw in the middle; cooked another 5 minutes and still too gooey. Cooked almost 50 minutes to get the middle done (and yes, I know to take them out while still loosely set in the middle, but these were WAY undercooked at 40 and 45 minutes) and the outsides were hard and no longer chewy. I should have covered the outsides with foil to prevent over-cooking, but hey, if you have to go thru all that trouble, why bother with this recipe? Perhaps the oven temp of 325 degrees was a misprint? Maybe cooking at 350 would help? So, even after 50 minutes of cooking, these brownies are still not cooked in the middle. Won't make again.

Erica's Delicious Slow Cooker Beef Roast

The key here, as one other reviewer found, is to use cream of celery soup rather than the mushroom soup called for. I also left out garlic; one can always sprinkle on garlic salt or powder to the finished product on the plate, if desired. Truly a WONDERFUL sauce; didn't even thicken it, and it was just right. SO good that I ate it the next day as a vegetarian meal without the meat! Truly, it is crucial to the flavor of the dish to sear the meat before putting it into the crock pot. Do NOT skip this step; you'll notice the difference! One more piece of advice; pour about 3 tablespoons of Worcestershire into the soup mixture; gives a wonderful nother dimension of flavor to this dish.

Slow Cooker Ham and Bean Stew

Sorry, I just was not that impressed. Tasted pretty much like some canned beans and ham, even though I added in 1/3 cup ketchup, 1 tsp chili powder, 1/2 tsp cumin, and 1/4 tsp season salt. And I so love using my crock pot; really wanted it to be wonderful.

Perfect Summer Fruit Salad

Sorry, but this just wasn't right . . . followed the recipe exactly, and the "sauce" never did thicken. I kept it anyway, refrigerated it (hoping it would thicken, but it didn't) and tossed it with some seasonal fruits. It was okay, but so not worth the trouble of making the syrup.

Blame the Dog Bean Casserole (Kielbasa and Bean Dish)

Brown the sausages in oven=proof skillet; add remaining ingredients and put right into oven. Remember to leave this uncovered; the point is to thicken the sauce to be more like a gummy paste; sounds gross but tastes very good. I would make again, but my husband does not like baked beans any way you fix them.

Tater Tot Taco Casserole

sorry, but I was not nearly as impressed with the outcome of this recipe as other reviewers. Nothing I can really put my finger on, just didn't "do it" for me. Thought the enchilada sauce gave it a "funny" taste - I did use the green enchilada sauce, as that's what the grocery had; perhaps if I had used red sauce? Regardless, it took almost 45 minutes to "prepare" to then put in the oven for 40 minutes . . . way too long for such a mediocre dish.

Hopi Corn Stew

I needed to make this with ingredients on-hand, and I had no hominy, so I used frozen kernal corn. Also only had two pounds ground beef. Turned out really good. I had read other reviews, so knew to kick up the spices to 2 TBSP chili powder and 1 TBSP ground cumin (remember, this is to only two pounds meat. Very nice flavor, would recommend.

Slow Cooker Pinto Bean Bonanza

sorry, just not very inspiring. I'd rather just cook pintos in water and serve with smoked sausage which has been grilled. The apple cider vinegar gave this dish a "funny" taste.

Simple Pouch Potatoes

Very simple; I do recommend one revierer's suggestion to microwave the potatoes for 3 minutes prior to grilling; this will allow them to be cooked in the time it takes to grill your chicken, or whatever meat of preference. I did not use any butter at all and didn't miss it. Just used the potatoes, some chopped red onion, bacon bits, kosher salt, pepper.

Busy Day Barbeque Brisket

Quite good, and tasty. However, was never able to "shred" the meat . . . it just never got soft enough to do so, although it was excellent just sliced thinly and served with the sauce. Did as other reviewers suggested and didn't put the sauce on until after 6 hours on low (at that point drained the meat before adding the sauce/worcestershire mixed). Then another 3 hours on LOW.

Spinach Rice

REALLY REALLY good; we frequent restaurants which serve a similar baked cheesy spinach/rice dish; this would rival any of those. I would highly recommend using real shredded sharp cheddar cheese, and topping with panko breadcrumbs before baking.

Monday Night Hot Wing Dip

I also used canned chicken, as I had that on hand and could make the recipe right away. It is wonderful hot out of the oven, but pretty bad when reheated. Just be sure to eat it all up at once!

Cucumber Avocado Salad

I was so surprised at how quickly this came together; I forgot to save out the avocado till the second "chilling", so it all went in together, but didn't hurt the taste at all. Not sure that the quartered garlic added any flavor, but it didn't hurt, of course. I had no fresh dill, so used about 1/2 tsp of the dried dill weed. This salad is SO good; a keeper!

Diner-Style Baked Potato Home Fries

the secret, which I never knew, is to bake the potatoes first (in the microwave is a great time/oven saver) and cook them on medium in an even amount of bacon grease and butter!

Very tasty; just enough of a cheesy taste to make you wonder what the flavor is . . . I do think this made too much sauce; next time I will do half-again as many veges for the same amount of sauce.
