Trailer Trash Cornbread

This definitely fancies-up plain ole hot dogs and chili. I added an additional can of chili, because it seemed too dry, and glad I did; texture was perfect. And, I made my own cornbread batter, rather than using the box. Good way to sneak in a few veges without the kids realizing it! I also used a red pepper rather than green; it's what I had on hand and I prefer the flavor of red.

Carrot and Zucchini Casserole

Very tasty; just enough of a cheesy taste to make you wonder what the flavor is . . . I do think this made too much sauce; next time I will do half-again as many veges for the same amount of sauce.

Steak Pie

really good. Like other reviewers, I added in some potatoes, carrots, mushrooms for a full meal (left out the celery and didn't miss it). I also simmered the mixture a good 45-50 minutes, rather than the stated 20. Did all of it in an oven safe pan so the flavors continued to meld. Was not wild about the puff pastry; would use a regular pie crust next time; just simply personal preference. Very hearty and delicious!

Garlic Red Potatoes

wishing I had paid attention to the reviewers before I made this dish. The potatoes were excellent; wonderful flavor. However, the cook times stated are not enough; perhaps the submitter used very small red potatoes? This dish needs an hour, NOT the stated 40 minutes total, to cook.

Tortellini Bacon Broccoli Salad

WOW! I am very picky with my 5-star ratings, so when I give one, you can take it to the bank. This was a wonderful salad, and I think you could even add in some cooked chicken or turkey for a main dish (maybe even some sliced strawberries, because of the sweetish dressing.) I thought I had fresh broccoli but had already used it up, so made this dish without it, and it was still divine. I did use an 8 oz bottle of coleslaw dressing, which was the perfect amount, so if I had added in the broccoli, it would probably need more dressing. And I agree with the submitter, the coleslaw dressing is the secret ingredient!

Chipotle Crusted Pork Tenderloin

As another reviewer suggested, I cut back on the chipolte chile powder to 1 1/2 TBSP, and upped the brown sugar to 5 TBSP. Even with those drastic modifications, this rub was still WAY too hot . . . almost burns your mouth . . . not a pleasurable dining experience at all. I advise all to find a different rub!

Pinto Bean and Sausage Soup

First off, this is a recipe which requires a day (or at least several hours) at home, because it must be "babysat" at several stages during the preparation. Nothing is difficult, but I followed the recipe exactly, and even though I am not a newcomer to cooking and know how to multi-task, this recipe took me three hours, start to finish. One other thing to note is I had to add more water (or beef broth) when I added in the potatoes and carrots; the liquid had already cooked down too much. So, rather than the stated 2 cans of beef broth, I would have four cups of beef broth on hand, and add liquid as needed. It is a good soup when finished - I did as one reviewer suggested and placed into the crockpot on low when everything was ready to serve. Just not worth the time of preparation, in my opinion.

Baked Kale Chips

sorry, but these kale "chips" are not good. I know, I was warned by the submitter not to expect "chips", but still . . . they just didn't even have a good flavor. Now granted, I am NOT a kale fan, so perhaps that is the reason I would not have liked them in any case. Just was hoping that the basic flavor of the kale could be masked by baking and flavoring.

Juiciest Hamburgers Ever

REALLY good; I used half and half in place of the evap milk, since I had some opened; otherwise kept to the recipe. My son-in-law ate two and said they were the best hamburgers he's ever eaten!

The Best Slow Cooker Cream Corn

so very very tasty! Would not recommend stirring the first hour, as the cream cheese,butter and cheese are still very hard; it seemed pointless. After two hours, it makes sense and the above will start to blend in with the corn. EXCELLENT!

Caramelized Onion and Horseradish Smashed Potatoes

wonderful! Would suggest cutting up the onions into bite size bits before adding to the potatoes, as they were quite stringy and LONG in with each bite of what was, essentially, mashed potatoes.

Slow Cooker Beef Stew IV

REALLY great recipe ... I tried to make it a bit easier on myself by browning the meat the day before and putting it in the frig overnight; also peeled and chopped the potatoes and put them in a gallon ziplock baggie, covered in water with a tsp of lemon juice added, in the frig overnight (the lemon juice keeps the potatoes from turning brown; be sure to drain and rinse well before putting into the stew). Then in the morning I sauteed my onion (used only one, large, onion) and added all ingredients together into the crockpot. Took another reviewers' suggestion of using wine in place of the water, combined with the flour at the end to thicken. My son ate his with a fork it was so thick! Simply delicious, and worth the time!!!
