Oven Scrambled Eggs

recipe is divine! I do whisk mixture one time through the second baking, and bake about 20 minutes on that second baking, to insure eggs are done.

Cajun Style Baked Sweet Potato

cubed the potatoes and used 4 tsp oil (more surface on the pan) and doubled spices (again, more surface to cover). Otherwise fixed recipe as written. Quite spicy, might tone down spices next time. Also, potatoes were cooked thoroughly at 40 minutes, but "limp" - I would suggest a minute or two under the broiler at the end of the cooking time.

Fried Broccoli

quite good, very tasty (I also added crushed garlic, like other reviewers) but be forewarned, this is spicy with the 1/2 tsp of crushed red pepper flakes. You can probably cut that amount in half and still have a great flavor without all the heat!

Slow Cooker Chicken and Dumplings

really really good; the juice, or gravy, is what makes this so delicious. Per other reviews, I used 1 can each creams of chicken, mushroom soups, and chicken broth; 1 tsp each ground cumin, dried parsley, poultry seasoning; 1/2 tsp each fresh ground pepper and salt. I used bone-in breasts, so let them cook first in the liquids for 8 hours on high; then put in the quartered refrigerated biscuts and cooked another two hours on high. However, even with the oval, larger capacity crock pot, only half the can of biscuits would fit in comfortabley. So, after we enjoyed our dinner, I put the remaining raw cut-up biscuits into just the liquid, and put on high another two hours. At this point you could also add in some frozen or canned vegetables of your choice. Perfect.

Slow Cooker Chicken with Leek Soup Mix

this recipe is SO easy to put together (10 mins at most) that I really wished I could give it 5 stars . . . however, it is pretty bland. With the addition of some spices next time, we'll see how it rates.

Herbed Slow Cooker Turkey Breast

this works well, and turns out quite moist meat, but not terribly flavorful, as the name implies. Seems that all the spices fall off the turkey and into the bottom of the crock pot with the juices. I think the spices need to be placed more inside the turkey carcass.

Slow Cooker Buffalo Chicken Sandwiches

as another reviewer suggested, I shredded the chicken after 5 hours on LOW; then added the butter and heated for another 2 hours on LOW; this really did help infuse the spiciness into the meat. Definitely served with ranch dressing on the buns.

Slow Cooker Baby Back Ribs

this was an excellent recipe, and I don't give out 5's easily. The key to the greatness is slow cooking for tenderness, then baking gently in barbecue sauce to give that ooey gooey glaze!

Beef Nacho Casserole

very good basic mexican casserole. After reading reviews, I also added a can of refried beans, and only used sour cream, NO mayo! Added a tsp of ground cumin, since we love that flavor. Used combination of fritos and crushed tortilla chips, as that's what I had on hand.

Basic Ham and Bean Soup

takes about 4 hours, start-to-finish. Makes about 4-5 BIG bowls of soup. For this kind of time, I would advise doubling the recipe, so you have more soup for leftovers. A good basic soup, but again, would probably add more spices for more flavor. I included 3 thin pork chops for more meat; added the meat along with the veges to cook through. Also chopped up the ham hock once it was cooked through, for more meat.

Bacon Wrapped Smokies

delicous, but pretty greasy. I didn't find that the smokies needed to be toothpicked - the bacon stayed wrapped around them just fine. One pound of center cut bacon will wrap two pounds (2 pkgs) of smokies.

Easy Weeknight Tuna Pot Pie

As others have said, it is a quick and easy recipe, with pantry staples you usually have on hand. I used 1/4 tsp garlic powder, and sauteed 1/2 red bell pepper along with the onion. As another reviewer suggested, I layered the crescent dough on the bottom of the pie plate with points sticking out of the plate. Mixture over the dough, cheese on top, then folded the left-out dough over the mixture. Worked very well; no soggy dough at all.

Cajun Chicken

VERY tasty; I marinated, then froze for a few weeks. Took the package (10 pounded breasts work well into a 2 1/2 gallon zip lock baggie) out of the freezer and thawed in the refrigerator a day ahead, then proceeded to grill. SO GOOD!

the secret, which I never knew, is to bake the potatoes first (in the microwave is a great time/oven saver) and cook them on medium in an even amount of bacon grease and butter!

Papa's Vinegar Chicken

I think this would have been very good, but they burned on the grill, and were very dried out (too long on the grill?). Probably not worth the extra time needed to poach in the briny mixture; it boiled over while simmering and made a huge sticky mess all over my kitchen stove and cabinets!
