Both my stepmother and father worked when I was a teenager (in the late 70's and early 80's), so I did alot of cooking. It helped having a cajun for a father. He taught me alot about seasonings and cooking. I didn't want to say that I'm an expert at cooking because I'm not. I learn new things all the time. But I will say that that everyone I've ever cooked for loves my cooking which happens to be the choice next to expert.
My favorite things to cook
I love cooking Mexican, Italian and Seafood. My family cannot get enough of my fried catfish. I also like creating my own dishes. I've had pretty good luck with it, so far.
My favorite family cooking traditions
My southern style fried okra which, believe it or not, I created when I was fourteen years old. Also, my family (now and when I was young) love my pinto beans with rice and/or cornbread. Very delicious! I will have to take some time and gather my thoughts for that recipe and submit it later.
Another tradition is inviting family and friends over for a crab and crawdead (crawfish or crayfish) boil. I usually buy about 60 lbs. of live crawdead and 4 dozen live crab and boil them in my 80 qt. pot with some kickbutt crab and seafood boil. YUMMY!!
My cooking triumphs
Craig's Awesome Chili. It's a crowd favorite. I might put this one on the website as well. It has come in 3rd place in a chili cookoff. This recipe might be too secret to share. LOL
