Double Layer Pumpkin Cheesecake
This was a great cheesecake! based on what other reviewers said, I used 3 packages of cream cheese, rather than two, a small container of sour cream, about 8 oz. of pumpkin and I added more sugar to taste. People said it wasn't as firm as regular cheesecake--and it wasn't, it was more creamy, not as stiff. It still had that rich, cheesecake vibe going, and because of the pumpkin element people didn't mind. Thanks!!!! I'll definelty keep this recipie around!

Broccoli Cheese Soup
This soup was fantastic! I'm a hesitant cook, and have always thought that soups were beyond me-- but not so! I did make a few changes--I sort of compbined this soup with another broccoli cheese soup that also included potatoes. I doubled the cheese (so glad I did!) added an extra can of broth (or the equivalent, I used better than boullion vegetable base added to water) threw in as much broccoli as I could (about three pounds) and put maybe half of the soup, before adding the cheese, into the blender. I also used flour instead of cornstarch. what this tells me is that this type of soup is incredibly forgiving, and easy to make! so go nuts!! I'm freezing a lot of my extra soup and saving this recipie to use again!

Pumpkin Oat Bread
this was great! I made it into muffins instead. I also, based on advice from another reveiw, upped the leavening ingrediant jsut a smidge. I think I could taste it a little and I didn't see much difference. I would bake these again, very hearty!
