Peanut Butter Bars IV

Just like my mom used to make when I was little but a lot easier. Sometimes I don't put the chocolate on top, but if I am giving them as a gift, I don't omit the extra calories.

Tailgating Spicy Taco Cheese Ball

Very good flavor and super easy to make. However, after rolling one into a ball and in the parsley, I decided to just put it all in a dish and use a cheese spreader to serve. Not as pretty, but I didn't like the idea of all that dried parsley.

Chunky Cheesecake Brownies

Never did firm up. I did taste the edges that were semi-baked, and was not impressed. I will just stick with my favorite one-bowl brownie recipe.

Easy Granola Bars

Flavor good - I used chocolate chips, macadamian nuts, banana chips, and then 2 1/2 cups oatmeal and 1 cup special K with berries - but it was super dry - my daughter thinks she broke a tooth eating it. Don't think I will make it again, although it might be ok if I pour some milk over it and eat it like cereal.

Szechwan Shrimp

I thought the recipe was ok. I didn't use ketchup, instead I used bottle chili sauce. I added stir fry vegetables which my guy didn't like - should have just followed the recipe as is (he can be picky about his food). Otherwise, an ok recipe - don't know if I will make it again as it wasn't that memorable, and I would rather have shrimp be the star than the sauce.

Hot Peanut Sauce

This recipe is 4 stars on it own - and it's an excellent base point to start at. I ended up adding minced garlic, curry powder, more red pepper, and quite a bit more soy sauce and peanut butter. It was excellent on whole wheat noodles, and on the side with grilled chicken breasts. The kids, however, were not amused with the fact that I used peanut butter on something other than on bread or in cookies.

Quick and Easy Pizza Crust

I have made this crust several times now, and it always turns out great. I did make the addition of some italian seasoning and garlic powder. The texture of the crust is great, and I have divided the crust into two balls and rolled them out seperately for thin crust pizzas. Worked great especially if you sprinkle your baking stone with cornmeal first. Very pizzeria notable. This recipe is a definate keeper!

Easy Tuna Casserole

Great base for a great tuna casserole. I, like the other reviewers, used cream of mushroom soup - 2 cans to be exact, and 2 cans of tuna. I also added 3/4 can of milk and a little bit of soy sauce to make it a little more zippy. I didn't have alot of cheese on hand. . .about a half a cup - but it was enough. Very good.

California Roll Salad

I followed everyone else's suggestion about the nori strips which really gave it a more "authentic" roll flavor. The dressing was fabulous! I could have drank it LOL. I chopped everything and left in bowls and we assembled the salad to our liking. Shrimp, faux crab, mango, macadamian nuts, avocado, nori strips, rice, and the dressing. It was fabulous!

Hot Spiced Cider

The spice combination is good, and the idea of using the coffee maker is great too. Way too sweet though - definately too much brown sugar. If I made it again, I will cut that down to half the amount. It does make a good hot toddy though (I drank mine with some rum).

Favorite Peanut Butter Cookies

These cookies didn't last long. My boyfriend told me not to make them again, because he can't leave them alone. The only things I had to change was the time I baked them for - baking for 12 minutes made the bottoms too dark, and they were too crispy. I baked them for 8 minutes and they were nice and chewy. I also rolled mine in sugar before baking them so they were more like my Grandma's peanut butter cookie. Perfect peanut butter cookie.

Banana Crumb Muffins

These muffins were very moist and easy to make. The only thing I did different was I added some chopped pecans to the batter and to the crumb topping. Very delicious - a hit with the whole family!

Pumpkin Cranberry Bread

This bread had a wonderful texture, no where near a fruit cake texture that was mentioned before. I did add pecans like other cooks have, and I used dried cranberries, but I boiled them first in water so they were back to a soft texture. I made mini loaves, and gave 2 away, and kept two. The kids loved it, as did the people that recieved the ones I gave away. Very good recipe - perfect for fall.
