Guacamole

Wonderful!! So simple and delicious!! I added a little more lime and cilantro, but other than that - just as is this is a great recipe. I'll never use a mix again!

Simple Scones

This is an excellent recipe! I followed as written and was quite pleased. I've used dried cranberries and will try a lemon-blueberry combination on the next try. One thing that really stood out is how little sugar is needed, and yet the scones have a hint of sweetness. This is a wonderful alternative to muffins and quick bread recipes that call for lots of sugar.

Real Hummus

This was an excellent base recipe, especially noting the author's revisions. As with any recipe you can vary to meet personal preferences quite easily and still have a very classic hummus. Also, an earlier reviewer mentioned boiling the chickpeas for 20 minutes prior to blending, and I found this very helpful. I drained and rinsed the chickpeas, then boiled in fresh water, and reserved the water from the boiling and used this when blending all ingredients. Last step, put the hummus in the fridge to chill before serving. Again, a great base recipe.

Miller's Marinara

Great base recipe. I needed to make a few adjustments though. I doubled the recipe, but reduced the salt and pepper. Also, I added a couple tablespoons of Balsamic vinegar and olive oil directly to the sauce mixture rather than use the oil to saute the onions. The onions were also added chopped and raw to the sauce mixture with a teaspoon of red pepper flakes. Great base recipe, thanks for posting it.

Pizza Dough III

This recipe worked really well for me. One change that worked well for me was to pre-bake the dough at 400 degrees for 8-10 minutes. The crust was crispier and the dough didn't get soggy under the toppings. I doubled it and used a bread machine for mixing, kneading, and rising. Half of the dough was used immediately and half is in the freezer.

Chicken with Peanut Curry Yogurt Sauce

This was such an easy recipe. I added slivered carrots to the pepper/onion mix. Also, I added two tablespoons of sweet chili sauce and a couple shakes of crushed red pepper. After reading the previous reviews I too thinned the sauce with milk. I topped it off with green onion. My husband doesn't like spicy hot food, which is why I used the sweet chili sauce. It was a good balance. I used Sriracha hot chili sauce to top off my serving. Very good, I'll definitely make this again.

Chicken Broth in a Slow Cooker

Raspberry Lemon Loaf

Great recipe. I didn't have yogurt, so I used a cup of fat-free Lactaid milk and two tablespoons of lemon juice. Also, I used frozen raspberries. Using a dark, non-stick pan the bake time was closer to 50 minutes than 60.

Irish Chicken and Dumplings

Smells wonderful! After reading other reviews I used chicken boulion paste to make stock rather than using water. Also, I added a touch of crushed red pepper, basil, and almost a full teaspoon of poultry seasoning. In addition to the listed veggies I added fresh mushrooms and omitted the potatoes. The whole house smelled amazing. This definitely makes more than 6 servings - lots of leftovers!

Salsa Chicken Rice Casserole

Great timesaving recipe. I made a few changes to make it work for my husband and me though. I used brown rice and served the casserole over the rice. Also, I made black beans to serve on the side. First layered a can of corn, can of diced tomatoes with chiles on the bottom of the pan. Second I added the cubed chicken mixed with cilantro and sliced mushrooms and green onions. Finally I added a layer of cream soup mixed with sour cream and salsa on top and mixed it slightly with the veggies and chicken. Topped with cheese and baked until hot and bubbly.

Best Tuna Casserole

Great baseline recipe. I added 1/2 cup sour cream, increased the chopped onion to 1/2 cup, and used a mix of Cheddar and Monterrey Jack cheeses (probably 1 cup total). Also, I used only one can of Cream of Celery soup and topped with French's fried onions. Finally, I added about a tsp of celery seeds and salt. Next time I'll add a little milk to increase the creaminess, but overall a great start.

Spinach and Leek White Bean Soup

Great recipe! I modified the recipe with one can of beans, a 10 oz package of frozen spinach, and three leeks. Two cans of beans was overwhelming, and I don't usually have fresh spinach on hand. Also, I put everything in a slow cooker on high for about four or five hours and served it with grated Parmesan cheese and a slice of bread.
