Make-Ahead Sour Cream Coffee Cake

I was short on supplies, so made several changes which still turned out fabulous! Use 1/2 c. sugar and 1/3 c honey for the 1 c. sugar in the original recipe. Only put in 1/2 tsp nutmeg since it can be overpowering. Used 1 c. greek yogurt instead of 8 oz. sour cream. Gently folded 2 c. fresh raspberries into the batter. Used hazelnuts instead of pecans. Turned out AMAZING! Very moist and the berries really shined. This is a keeper!

Mexican Bean Salad

We use the frozen fire-roasted corn from Trader Joe's for the canned corn. Everything else is pretty much spot on. Great make-ahead recipe to feed a crowd and our 1 yr old loved it too!

The Best Vegetarian Chili in the World

We'll make this one again w modifications. I used extra lean ground beef instead of the veggie crumbles and used a whole onion - all tasting great. Chili powder was a bit overpowering for our taste, so I might up the cumin/oregano a bit and cut chili powder down a couple tablespoons. It had great color and a nice depth of flavor.

Basic Corn Muffins

So hard to find a good cornbread recipe out there that does not have a ton of oil or butter or heavy cream, but this one is a keeper! I used two eggs, instead of one. Turned out very moist, good cornmeal flavor and great texture. Might try 1/4 c. melted butter next time instead of the 1/4 c. of oil.

Scalloped Potatoes II

Excellent as-is, but really good as a base recipe. Slices Yukon Golds with my mandolin slicer, very thin and used half heavy cream and half 2% milk. I was surprised how buttery and flavorful this turned out. The top pieces were nice and crispy. Next time, I'll add thinly slices garlic, just 2% milk and perhaps some cheese. Would be great with chives sprinkled on top as well.

Chewy Chocolate Chip Oatmeal Cookies

our oven runs hot, so I baked at 300 degree for 12 minutes. best chocolate chip cookies I have ever made! followed instructions exactly except used bittersweet chips. hands down, best chocolate chip cookie recipe!

Whole Wheat Ginger Snaps

I halved the recipe and it turned out great. The dough was really sticky, so I ended up using 2 1/2 cups ww flour instead of 2 like the halved recipe called for. They baked for about 8 minutes and turned out perfect - moist and slightly chewy. Will definitely make again!

Lemon Poppy Seed Muffins I

Good, moist, nice lemon flavor. I used a very scant 1/4 c poppy seed, after reading other reviews. I screwed up the last part, instead mixing the lemon juice into the batter. It turned out great despite the mistake and I didn't add the last few T of sugar. They are sweet enough for me! I had enough batter to fill one regular muffin and a mini muffin tin.

Veggie Pot Pie

How can something so simple be so good? I added a slightly different group of veggies, based on what I had laying around. It turned out wonderful! Next time, I'll multiple my crust by 1 1/2, as it was a little hard to cover the pan. I used flour instead of cornstarch, starting with 2 Tbs. The sauce was a little thin for my taste, so I added another 1 Tbs and it turned out great.

Spiced Plum Bread

Great use of abundant plums! The dough was pretty dry, but the plums were overripe, so after adding them to the dough it was perfect consistency - no need to add more liquid as others have done.
