Zucchini Bread

Mmmmmm!! So delicious!! Couldn't figure out why no salt. I do kind of wish I added it. I did add a little vanilla, and a super ripe banana, just because I had one. Baked in a very large loaf pan for 80-90 minutes. Then I rubbed a pat of butter on the top right when I took it out. It was so beautiful, I wish I took a picture. We were just too excited to cut into it. It's definitely a big hit, and I'll be adding this to the lineup! Thanks!!

The Best Thai Coconut Soup

AHHHHH, my tummy is SO happy!!! Added very thinly sliced chicken instead of shrimp, regular white mushrooms (couldn't find shiitake), peas, carrots and then fresh spinach at the very end instead of cilantro. Oh, and chili oil to spice it up a little. Ridiculously delicious! Thank you!!

Cheese Souffle from Egg Farmers of Ontario

Suddenly decided I wanted to try to make a soufflé this morning. This was the best-looking recipe I could find. Never having made soufflé before, I wasn't expecting much, but they turned out great! I didn't have enough cheddar cheese, so I added some cream cheese & pepper jack, plus some chopped ham & dill. They looked lovely & tasted great!! Will probably make again.

Chicken Tikka Masala

This was excellent! Yuuummmm, I'm about to have seconds! I could pretty much eat Indian every day, so this is definitely going to be a new staple in my house! I didn't put ANY salt in the marinade and just a sprinkle in the sauce. I used thighs & legs, which to me is more moist. Our grill is broken, so I broiled the chicken, then cut it off the bones. I also only used about half of a jalapeno because nobody in my family can handle much heat. I served with homemade naan, and it was a BIG hit!

Banana Pudding IV

DELICIOUS!! I always thought banana pudding was just banana pudding & Nilla Wafers! No WONDER it was always so "blah", haha!! Thanks so much for this, it was SCRUMPTIOUS! I used a graham cracker crust, because I happened to have one and needed to use it. Then I lined it with bananas, pudding, nilla wafers, pudding, bananas, wafers, pudding until it was gone. I also added an extra small box of banana pudding (used the original box of vanilla) because with the 3 cups of milk, it seemed pretty runny. It was a big hit! YUM!

Thank you, thank you, THANK YOU!! Second time I've made it to eat with my pumpkin curry I'm most recently addicted to. I just can NOT eat curry without Naan!! I also found it took much more than an hour to double in size each time I made it, but I wasn't in a rush, so it worked out fine. My babysitter stumbled upon some of this in the fridge, ate it, and thought I had bought it at an Indian restaurant! I can't thank you enough for this recipe!! :)

Curry Pumpkin Soup

This is EXCELLENT! I use "wet" curry (the kind in the jar) and just tweak things here & there to the flavor I like. It has become a staple in my house and my FAVORITE fall/winter dish! I've started making Naan to go along with it - YUM!! Everyone who's tried it or even smelled it (brought it for lunch at nursing school) has drooled over it. THANK YOU!!

Apple Pumpkin Muffins

Delicious! I've made it twice in the last week and got rave reviews from friends, classmates, coworkers, and my kids! I just had problems making the crumble both times. I blame that on myself, though, and they still came out SCRUMPTIOUS! :)

Honey-Glazed Chinese Chicken

Didn't have Hoisin sauce, so kindof threw together some stuff to try to mimic it (dark karo syrup, chines 5 spice, a couple of dashes of chinese hot sauce and a tiny bit of cooking sherry). No idea if it even came close, but MAN was this DELICIOUS! I think it was the best chicken I've ever made! One of my 7 year old twins at THREE drumsticks (all of my kids are picky eaters and eat like little birds)!!! I was so disappointed when I came home from class to ZERO leftovers!

Spicy Peach Chicken

Absolutely delicious! Big hit with my picky hubby! Didn't have Creole seasoning or preserves. Used "Hot Shot" pepper blend & Lawry's Seasoned Salt and chopped/mashed canned peaches. This will definitely be added to the rotation! Thank you!!

J.P.'s Big Daddy Biscuits

I have to say these are FABULOUS! I had a huge potluck at my house and wanted to make homemade biscuits to go with the Beef stew I had made! I looked & looked and finally found this one. They came out perfectly! I prefer "drop" biscuits, though, so I didn't roll or cut, just scooped, put on pan & cooked! BIG HIT!! THANK YOU!!!

Easy Chocolate Chip Cookies

I saw this and HAD to try it. I couldn't believe that cake mix could taste like cookies. I'm picky, and these are delicious!! Not as good as grandma's recipe, but nobody would know they took 5 minutes to prepare! Better than Nestle, I'd say.
