Granny Kat's Pumpkin Roll

Followed this as written. It was very enjoyable - but I think it needs a little salt in the cake batter which I will try the next time I make it. Perhaps 1/4 tsp. It becomes a very spongy, moist cake once it's sat in the fridge with the filling rolled into it for a few hours. I used parchement paper on the bottom of my jelly roll pan and sprayed it a little with Pam just before adding the cake batter. Worked like a charm and peeled right off.

Quick Tartar Sauce

Good recipe - like the poster says, it uses ingredients you have on hand. If you have capers on hand they give the sauce a more tart flavour if you don't like the sweetness of the relish. Just chop them up first. (I'd use a tablespoon or more, but that's just me)

Bread Machine Challah I

I followed this as written. Most excellent! Oil can be used in place of margarine. It does great as is in the bread machine on full cycle - of course you won't get the braided look but the texture is just great!

They turned out just as the original poster said they would. FUDGEY!! If you want them a little less fudgey and less sweet, leave out the chips. These guys are great!

Cheddar Casserole Bread

Forgive me Marillyn, I like to make thing as written so I can make a proper review. However, i saw the reviews with some saying it was dry. I ended up adding a little over 1/4 cup of oil to the wet ingredients (true biscuit fashion would have butter/margarine cut into the flour mix) and added some garlic salt. It was FANTASTIC and moist! Thanks for sharing this!

Spoon Buns

I followed this as written (didn't have nutmeg) and they were very nice! However the dough was anything but a batter. I measured out the 3 1/4 cups of flour twice to make sure I wasn't mistaken and that amount was too much. It was a fairly stiff dough for me (ended up not using the last 1/4 - 1/3 cup) but I still followed through - formed them into buns and baked them in a muffin tin. Delish! But will try again, though.

Chimichurri Sauce

Baked Doughnuts

Dense? These guys? Not mine! The only thing I did different was use vegetable oil in place of melted butter. Didn't even sift the flour like someone stated. I have a mini muffin tin so they came out just perfect!

Tofu and Veggies in Peanut Sauce

This was fantastic! I marinated the tofu in olive oil, sesame oil, light soy, star anise (you can use 5 spice) fresh garlic and fresh ginger then browned it first. Used Organic Spelt udon noodles. I also added about a tsp sesame oil to the peanut sauce. Top this with lightly toasted sesame seeds. It's marvelous! Thanks!

Jewish Grandma's Best Beef Brisket

This is DA BOMB! Just delicious and a very successful dinner! I did follow some pointers by other reviewers and browned on all sides plus covered it in low sodium beef broth instead of water. I served it with smashed garlic red taters and oh my! Thank you FriendlyFood for sharing this.

Chocolate Eclair Cake

This is da bomb! I first made this back in 1980 and I used arrowroot cookies. You can use almost any plain cookie that isn't chocolate covered - the kind you can dunk in milk or coffee and it gets soft quickly. Biscotti might even work but I haven't gone that far!

I've used both recipes in this site and both are great! I found myself yearning for some nuts in it, though. Will add about a 1/2 cup next time - I'm going to experiment with chopped peanuts, walnuts and pecans (individually for starters).

Amish Meatloaf

I haven't read many reviews but I have to add my two cents. I've made this twice. First time I followed it almost exactly (I had to make homemade ketchup as I never buy the stuff) and it was wonderful! Second time, I added some spicy Italian sausage to the meat mix and used all BBQ sauce in place of ketchup and added a few drops of hickory smoke to the meat mix. I also omitted the bacon.and did not use any salt. My husband and I aren't into sweetish meat meals but this one (to us anyway) is NOT overly sweet like a few reviewers have stated. The BBQ sauce gave the glaze a lovely dark and very shiny colour. I cooked and cooled it and left it for one night in the fridge for the flavours to blend better and while the wait was a trial, it was WORTH it. I will try NO OTHER meatloaf recipe now after years of testing many. This is the Real Meatloaf McCoy. Thanks, Duano.

Cauliflower Casserole

This was very enjoyable but I couldn't help to add a few things, I browned some sweet onion, garlic and diced jalapeno into a very small amount of butter (maybe 1/8 c or less) and tossed the 1/2 head of steamed cauliflower into in the pan then transferred it to an 8x8 and covered with a lite shredded cheese. Did not use parmesan. When steaming the cauliflower, I put italian seasoning, garlic and hot pepper flakes into the water for added flavour.

Slow Cooker Stuffing

Excellent! I halved this. I did add some cooked Jimmy Dean hot sausage, dried cranberries and chestnuts to the mix and FORGOT to add the egg. It was just fine without it. Due to the warnings, I watched it cook through the day and didn't add all the broth but I did have to add just a tad more part way through. This is a definite keeper.

Nut Goody Bars

These are good! I did this in a large glass bowl in the microwave. All the chips took about 2 - 3 minutes on high, you need to take it out half way through and stir it plus watch it so it doesn't over heat. Tossed in the PB, nuts and marshmallows - very easy! I put in pecans and peanuts. My suggestions: this makes a very thick 9x13 panful - you might want to spread it in a jelly roll pan for smaller portions OR use less chocolate chips like 3 cups and maybe 5 cups of marshmallows. I'm using all salted peanuts next time! Thanks, Uncle Brian!
