Banana Oat Muffins

This is a great recipe to use up old bananas. I've made these twice and would recommend adding a pinch of cinnamon and nutmeg. Very yummy in the morning with coffee for a breakfast on the go!

very rich and gooey. I did not have very much oatmeal mixture for a topping after making the bottom crust as written, but they turned out very yummy anyway.

Chocolate Cupcakes

Really easy recipe. I followed another reviewers suggestion and added the butter to the wet ingredients and sugar to the dry. The cupcakes are really simple and taste great.

Sarah's Banana Bread Muffins

This recipe is really great! I love how easy and customizable it is. I tried the recipe as written, but for a second batch, I added more chopped pecans. I topped a few with old-fashioned oats. I also used canola oil and some brown sugar, and per some reviewers, added a tsp of vanilla extract and a dash of cinnamon. Mine were nice and golden in 26 minutes.

World's Best Pumpkin Pie

The filling has an okay flavor, but the recipe as-is makes entirely too much for one pie! It also takes a long time to firm up. I'll probably try a different recipe next time.

Winter Lentil Vegetable Soup

very yummy! I did make a few changes. I used a packet of frozen soup vegetables since I didn't have any fresh carrots or celery. I also used more cabbage than called for and left out the sugar and basil. The soup is so good and cozy!

Peanut Butter Chocolate Chip Cookies II

These are yummy! One minor change I made was to add more flour. I didn't have any brown sugar on hand, so I used only white. The cookies came out great--very soft and buttery.

Roasted Squash Soup

Wonderful! I made this according to recipe, with minor changes based on what I had on hand. I used homemade chicken stock instead of vegetable stock and dried ginger instead of fresh. I only had 2 cups of chicken stock, which I think accounted for the thickness of my batch. It's perfect for chilly nights!

Zucchini Quiche

I followed the recipe as is (with the exception of subbing milk for half and half) and wasn't too happy with the outcome, which was watery. It also took longer than 45 minutes, at least in my oven and I even upped the temp to 375! I would recommend cutting down on the cream/milk called for.

Seven Layer Tex Mex Dip

I took this to a party and the bowl was practically licked clean. My only changes were omitting the mayo and taco seasoning (just added a little cumin and chili podwer to the refried beans) and I used mexican cheese blend instead of cheddar. I'll definitely make it again!

Spicy Baked Sweet Potato Fries

Very good, with some adjustments. Based on what others said in reviews, I used cayenne, salt and pepper to season and about 2 tablespoons of olive oil. Cooked at 400 for just under an hour. They turned out great!

Spinach, Red Lentil, and Bean Curry

This is so tasty! I made a few changes based on what I had on hand and what I read in other reviews. I used green lentils and cannellini beans. I upped the amount of spices (kind of on the fly) and also added crushed red pepper. Didn't use cilantro and didn't really miss it. I also made a bit more sauce because we like extra. It was great!

Blueberry Crumb Pie

quite good! I cut down the sugar in the pie filling just a tad and, per some reviewers recommendation, added cornstarch (about 1TB and a half). The crumb topping is delicious!
