Black Beans a la Olla

Reviewed: Jun. 20, 2014
Okay...add salt. But otherwise, this is one of the most fabulous (and healthy!) recipes on the site!

Disney's Ratatouille

Reviewed: Mar. 20, 2013
This was absolutely fabulous, for all those veggie lovers out there. Really, any combination of squashes, peppers, tomatoes, etc. would work here. Obviously the recipe calls for veggies more traditionally in ratatouille, but that doesn't mean you HAVE to stick with them. I added salt, pepper, brown sugar and a dash of cayenne to the tomato paste/water to give it a little push. I also tossed the vegetables with oregano and coriander. Really, though, that's totally personal taste. This is a great baseline recipe that made the house smell delicious all night. Really, I will make this again and again.

Delicious Ham and Potato Soup

Absolutely fantastic. Nice salt level. One of the very few recipes that I didn't feel the visceral need to change anything on.

Simply to die for. If you like buffalo chicken wings, this is the salad for you. I use Frank's for my buffalo sauce.

Pumpkin Chocolate Chip Cookies III

Reviewed: Oct. 21, 2012
Loved it! I made the following changes: Substituted 1/4 cup butter and 1/4 cup applesauce for the oil. Cut the chocolate chips down to 1 cup. Omit the nuts. Even with these healthier changes, these cookies are to die for. Perfect texture (cakey) and taste. With these changes, the cookies are about 80 calories a pop. Not too shabby!

Real Strawberry Frosting

Reviewed: Apr. 12, 2012
Fabulous recipe. I did use more strawberries (I like the flavor) and ended up not using 1/2 cup of the powdered sugar. Overall divine!

Peanut Butter Cookies IX

Reviewed: Feb. 22, 2012
Fabulous recipe! My wife and I only use 1/2 cup each of the sugars. Per other reviews, we also omit the wheat flour and just increase the white flour to 1 cup. We have to add a tablespoon of milk to the dough when all is said and done to get the correct consistency. (We also use butter flavored Crisco instead of butter.) These cookies are divine. I highly recommend them!

Clone of a Cinnabon

Reviewed: Oct. 26, 2011
These got good reviews from my classmates, but I wasn't necessarily a fan. The dough was not as easy to work with as other recipe's I've tried. Also, there was a LOT of sugar/butter in the middles. Just a little too sweet for me. Again, they're pretty good, but not really worth the calories.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Reviewed: Oct. 10, 2011
Seemed like an absolutely fabulous idea, but I tried it multiple times without success. Maybe it's the altitude here, but I will not try these again.

If you're baking at altitude, these changes are a must! I had so many cakes suffer in the oven before I read this. Then, I got it right the very next time.

Chocolate Butter-Creme Frosting

Reviewed: Oct. 7, 2011
I liked this recipe pretty well. I agree with earlier reviews that it's not overly chocolatey, so I would add more unsweetened chocolate for a richer flavor. Altogether very good!

Yes, this is absolutely fabulous! My wife and I tried it with chicken, but the original version stands all by itself. It stands alone as a meal. Fantastic!

Simple Whole Wheat Bread

Reviewed: May 12, 2011
My wife and I are experimenting with baking bread instead of buying it. This was the best one we've found! It was so light and moist. It wasn't even half as dense as some as the other ones, making it ideal for sandwiches. I only added a little vital wheat gluten to make the bread stick together better (I substituted it for some of the all purpose flour) and added a little more yeast. Wonderful recipe!

Maple Apple Crisp

Reviewed: Apr. 20, 2011
LOVE this recipe! My wife and I use it when we need something quick/easy that everyone will love. We also cut the butter down to at least a quarter cup and use only about 1/3 - 1/2 cup maple syrup.

Homemade Vanilla Pudding

Reviewed: Apr. 17, 2010
Great recipe! I've looked forever for a pudding recipe that is light (a.k.a. no eggs), and this is the best I've found. I sometimes blend up a banana and put that in for a banana pudding. I have also tried chocolate and other fruits. This is a fantastic and diverse recipe to keep in the front of the cookbook!

Chocolate Sugar Cookies

Reviewed: Jan. 21, 2010
Very good cookies. Instead of rolling dough out and cutting shapes, I rolled dough into balls and sugared them. They needed a little more cooking time, but they came out nice and chewy. Great recipe!

Great recipe! I used wheat instead of white flour, which still worked fine. I also find that this recipe only makes about 6 bowls instead of 8.
