This was absolutely fabulous, for all those veggie lovers out there. Really, any combination of squashes, peppers, tomatoes, etc. would work here. Obviously the recipe calls for veggies more traditionally in ratatouille, but that doesn't mean you HAVE to stick with them.
I added salt, pepper, brown sugar and a dash of cayenne to the tomato paste/water to give it a little push. I also tossed the vegetables with oregano and coriander. Really, though, that's totally personal taste. This is a great baseline recipe that made the house smell delicious all night. Really, I will make this again and again.
