Moist Banana Muffins

I have made these a few times now. They are moist, tasty and oh so quick and easy to make. If you first mix sugar, mayo and bananas, and let it sit for a minute or two, while you get the dry ingredients together, there will be plenty of liquid to work with, without any dryness.

Quinoa Tabbouleh

This was a hit at my party last night. I doubled the recipe and did not use green onions. Everyone who asked for the recipe was directed to allrecipes website. Thank you, SYNEVA B for a healthy, flavorful and potluck friendly recipe.

Cranberry Orange Cookies

Since I was making these for the first time, I decided to halve the recipe. I made some changes and omitted the frosting. I had an orange at home but did not want to juice it so I used orange essence instead. This is what I did - 1 cup + 2 tablespoons all purpose flour mixed with 1/4 tsp salt and 1/2 tsp baking powder. I creamed 1 stick of butter with 3/4 cup brown sugar. Added 1 egg, zest of 1 orange and 1/2 tsp orange essence. Added the flour+salt+baking soda. And then I added 1 cup of dried cranberries + 1/2 cup of slivered almonds mixed in with 1 tbls of flour. Refregerated this dough for 30 minutes. Baked at 350 for 12 minutes. And a new cookie tradition is born. This is my new favorite cookie. Very yummy, very classy.

Apricot Lentil Soup

I cooked the soup in a pressure cooker. (I grew up in India and we always cook lentils in a pressure cooker.) I made this ahead of time for a dinner party at my house. When it was time to serve, the soup had thickened to large lump. I diluted with chicken broth. I had four guests and they all agreeed that this soup was the bomb. It was really yummy. Cannot wait to make it again. However, if you plan to make it ahead of time, you may want to reduce the lentils to one cup.

Giant Chocolate Chip Cookie

I have made this a few times now. I bake the cookie in a pizza pan and leave an inch and a half border around the cookie dough. I lower the oventemperature to 325 midway between baking and turn the pizza pan to ensure even cooking. It is so much easier and better than baking someone a birthday cake and they always love it. I decorate it depending on the occasion. It always gets great reviews.
